One of my favorites involves toasting pine nuts in a dry skillet, removing them, adding a bit of oil, mix in the kale, let wilt for a minute or so, and then add a lemon juice and oil mixture, sprinkle on the pine nuts!. Yummy!

You could try a simple sauteed kale recipe!. It calls for:
1 bunch of kale, washed and chopped into bite-size pieces
1 yellow onion, sliced
1-2 cloves of garlic, minced or finely chopped
2-3 tablespoons of extra virgin olive oil
Juice of 1/4 lemon
1/2 cup of vegetable broth or water
Sea salt and pepper, to taste (optional)
Warm olive oil over medium heat in a large pot or pan!. Add onions and cook for 3-5 minutes or until slightly translucent!. Be sure to stir the onions around once in a while so that they don't burn!.
Add garlic and kale and mix them together with onions!. Allow garlic, kale and onions to cook for one minute, then add vegetable broth and cover pot or pan for 4-6 minutes!. Check kale from time to time starting at the 4 minute mark for tenderness!.
Once kale is tender, add sea salt and just a few drops of lemon juice!. Give it one last stir and serve!.
Be sure to taste as you add lemon juice!. Make sure you don't add too much, because it will make the whole dish sour >!.<
And you can serve this with quinoa or brown rice, for a nice healthy dish!.
Another good recipe is bean and kale soup!. This one calls for:
1 tablespoon olive oil or canola oil
8 large garlic cloves, crushed or minced
1 medium yellow onion, chopped
4 cups chopped raw kale
4 cups low-fat, low-sodium chicken or vegetable broth
2 (15 ounce) cans white beans, such as cannellini or navy, undrained
4 plum tomatoes, chopped
2 teaspoons dried Italian herb seasoning
Salt and pepper to taste
1 cup chopped parsley
In a large pot, heat olive oil!. Add garlic and onion; saute until soft!. Add kale and saute, stirring, until wilted!. Add 3 cups of broth, 2 cups of beans, and all of the tomato, herbs, salt and pepper!. Simmer 5 minutes!. In a blender or food processor, mix the remaining beans and broth until smooth!. Stir into soup to thicken!. Simmer 15 minutes!. Ladle into bowls; sprinkle with chopped parsley!.

YUMMY! Cut the kale into small pieces, removing the center stem if it seems very tough!. Stir-fry on low heat in butter and then add soy sauce!. Sprinkle sesame seeds on top to serve (optional)!. You can also steam it and then add in soy sauce, lemon juice and sesame oil!. It can also be substituted for spinach in lasagnas and anywhere else cooked spinach is used!. Www@FoodAQ@Com
