The classic ones that you usually get at diners and such use processed cheese slices to get that gooey consistency!.
For the best results, use regular white or brown bread, lightly buttered on one side with soft butter (to prevent the bread form tearing)!. Place one thick, or 1!.5-2 regular sized slices of processed cheese on the unbuttered side, making a sandwich with the buttered sides on the outside!.
Place in a medium-high nonstick saucepan (no need to put butter or oil in the pan, as the outside of the bread has butter on it)!. Press down to get that nice flat look!. Check on occasion to see how brown it's getting!. If the bread browns quickly, cover with a pot lid!. This will raise the temperature around the sandwich, melting the cheese faster!. Flip when the bread browns enough and repeat!.

Take 2 slices of bread!. Make a cheese sandwich!. Butter the bread on the outside of the sandwich!. Then place the sandwich in a hot frying pan!. Fry until the first side is golden brown!. Then use a spatula to flip the sandwich!. Continue frying it until the other side is golden brown!.
I suggest using soy cheese (I use vegan gourmet) with tomato or imitation bacon bits!. (most imitation bacon bits do not contain any type of animal product)I use vegan garden instead of the butter!. Www@FoodAQ@Com

I've made Grilled Cheese for my boyfriend for dinner 3X this week because he likes them so much!
1) Get spreadable margarine
2) American cheese slices (but Swiss is good too, or I use Mozzarella on Grilled Cheese a lot!)
3) Good sliced bread
Butter one side of 1 slice of bread, put it in your non-stick skillet, put any kind of cheese you want on top (usually 2-3 slices or a little mound of shredded)!. And top with another piece of buttered bread, butter side UP!.
Heat your non-stick skillet to medium-low heat and let cook for about 3 mins!. Check doneness with a spatula!. If it needs more brown, check again in another 2 mins!.
Flip!.
Let cook for 2 mins, then turn off the heat!.
Come back in another 2 mins and your sandwich will be perfect!
***I've also tried bleu cheese and Fresh Mozzarella cheese in Grilled Cheese and its great!. Add sliced ham or sliced turkey and the sky's the limit!.

You should AVOID microwaves and any overly processed foods (i!.e!.) cheddar slices and mozzarella shredded cheese!. As these types of cheeses are bland and tasteless because they are produced commercially en mass!.
You need to make it the old fashioned way – take your time and use good quality food!.
I would buy a good quality gourmet style cheese in a solid block - maybe from a specialized deli, where they know about the cheese and how long it has been cured for!. The longer it has been cured for, the more tasty it will be!.
A good old fashioned traditional flavorsome mature aged cheese such as:
English Cheddar
Cheshire Cheese
Lancaster Cheese
Stilton
You also need some good quality bread!. A thick crusty loaf that you slice yourself (rather than supermarket pre-packaged and precut) would be wonderful!. Most bakers have these or you could bake it yourself!.
You need to melt and brown the cheese under the grill, as this helps the flavours to intensify and mature!. If you melt cheese in a microwave, it just produces a stringy bland mess!.
For sensational cheese on toast / grilled cheese sandwich you should follow a recipe for Welsh Rarebit (also know as Welsh Rabbit) there are hundreds of versions on available, just find one that suits you!.
My favorite is one that uses mustard and beer!.
Here are a couple of recipes to get you started!. Just remember you can adapt them to suit your tastes and budget:

butter one side of 2 slices of bread!. heat the stove top to medium!. put 1-2 slices of chz in between the bread's un-buttered sides!. so now you have a chz sandwich, buttered sides out!. when the skillet is hot, put the sandwich in, and don't turn it until it is done on one side, about 2 minutes!. if the skillet starts smoking, turn it off!. Flip halfway thru, and if it starts smoking, turn off the burner and let it fisish toasing on the hot skillet til done, don't burn it!. Thats it!. I add tomato slices when done, then cut in half!.Www@FoodAQ@Com
Take your bread and butter one side of each slice, put whatever cheese on you would like!. ( I prefer cheddar slices)
Put the slices together and place butter side down, keep the heat at medium to med low!. and flip when they are brown!. by keeping the heat lower you will allow the cheese to melt before the bread toasts!. Www@FoodAQ@Com
