The Best Breakfast Scramble Ever! -
Ingredients (use vegan versions):
Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons or less of vegan margarine
Stir fry:
1/2 onion
1/2 green pepper
1 tub drained and crumbled extra firm tofu (not silken style)
cooking oil
turmeric (optional)
salt and pepper to taste

Directions:
Make Cheez Sauce:
Mix first 3 ingredients together in sauce pan!. Add H2O and mix thoroughly!. Heat on Med until thick and bubbly!. Remove from heat and add mustard and margarine (I like Earth Balance)!. Set aside!. *I got the recipe for this sauce from this site (cheesy enchiladas)*
Stir Fry:
Saute up some onion, and green pepper in oil!. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu!. Add more oil to the middle of the pan, then add your drained, crumbled tofu (don't use silken, use extra firm)!. When it starts to get golden, mix in the peppers and onion and keep frying!. You can add some turmeric for color if you like!.
When it looks like you could eat it, add the nutritional yeast sauce and mix it all in to coat until that becomes golden brown too!. I saute this for another couple of minutes!. You might not need all of the sauce!. I save the leftovers for pizza or nachos!.
Add salt and pepper to taste!.
Serves: 3-4, Preparation time: 20 minutes
Great with toast, bagels, or burritos, hash browns, pancakes, tempeh bacon, or by itself!

Flashback Mac and Cheese
Ingredients (use vegan versions):
1/2 cup flour (I use all-purpose)
3/4 cup nutritional yeast
1 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 cup water
1 cup unsweetened, non-dairy milk
3 tablespoons mild-tasting oil (such as corn oil)
1 lb!. macaroni (or fusilli, bowties, shells - whatever makes you happy)
Directions:
Cook macaroni (or other shaped pasta) according to package directions!.
While your mac is cooking, let's make the special secret "cheese" sauce:
In a bowl or large measuring cup, combine the water, milk, and oil and whisk briefly!.
In another bowl, combine all of the dry ingredients together!.
Heat a medium saucepan!. Add the dry ingredients to the saucepan, and slowly add the wet ingredients, continuously whisking over medium heat!. Once all of the ingredients are incorporated, turn up the heat until the mixture begins to bubble and thicken!. Keep whisking as the mixture thickens and bubbles - do this for about a minute or two, and then turn the heat down!. Keep whisking (your arm may be tired, but it's a small sacrifice, trust me)!. After a spell, your "cheese" sauce should be nice and thick!. Turn the heat off, and cover your saucepan!.
Check your pasta - is it done!? If so, drain well, and return your noodles to the pot!. Add all of your "cheese" sauce to the noodles, and stir well!.
If, after your first trepidacious couple of forkfuls, you find that this recipe doesn't beat the pants off of the dairy mac and cheese with which most of us are familiar, you must have done something wrong!. Come over to my house!. I'll show you how it's done!.
Serves: 2-4, Preparation time: 15-20 minutes

Veggie Lasagne

Ingredients
2 tbsp light olive oil
1 medium onion
4 cloves
1 red pepper
1 green pepper
2 zucchini
8 oz mushrooms
3-4 cans chopped tomatoes in tomato juice
fresh basil
2 oz flour
2 oz butter
1 pint milk
3 oz mozzarella
2 oz cheddar
sheets of lasagne (NOT pre-cook lasagne!)

Heat the oven to whatever temperature is recommended on the lasagne box!.

Heat the olive oil in a big pot
chop onion and add to pot
chop garlic and add to pot
chop other vegetables fairly small (? inch pieces) and add to pot
keep stirring to keep from sticking!
add cans of chopped tomatoes
add fresh basil - don’t skimp!. The more, the better!.
bring to boil and keep at a high temperature to allow tomato sauce to reduce!.

Grate the cheeses!. You need about two cups of grated cheese!.
Heat the butter in a pot!.
Add the flour and stir until the mixture makes a dryish ball on the bottom of the pot!.
Add the milk, just a little at a time, and blend into the ball of flour with a metal whisk!. Make sure the milk is evenly absorbed before adding more!.
Once all the milk is in the pot, bring to the boil while whisking madly! Failure to whisk madly will result in a lumpy sauce!.
When the sauce boils it will get thicker!. This is good!.
Add most of the grated cheese (but keep half a cup aside) and keep the temperature up until all the cheese has melted!. By now the sauce should be the consistency of heavy cream!. If it’s too runny, add more cheese!. If it’s very thick and not runny enough, add a tiny bit more milk!.

By the time the cheese sauce is ready the tomato and veg sauce should have reduced so that there is no liquid left and the sauce is quite thick!.

Turn off the heat under the sauces!.

Using a ladle, pour some of the cheese mixture into a lasagne dish!.
Add sheets of lasagne along the bottom of the dish!.
Add a layer of tomato and veg sauce!.
The another layer of lasagne!.
Then another layer of cheese sauce!.
Add a second layer of tomato and veg sauce
and another layer of lasagne
and finally a layer of cheese sauce!.
Sprinkle the remaining half cup of grated cheese over the top!.
Put in oven and cook for the time recommended on the lasagne box!.

Freshly roasted Mediterranean style vegetables!. You can virtually use which vegetables you prefer!. I add about a whole garlic to add loads of flavour!. also, chop some raw potato in small chunks, oh, and don't forget the corn on the cob, that is better roasted!. I like to accompany that with a good Rueda wine, which is a light fruity wine from Spain!. What more could you wish forWww@FoodAQ@Com

vegetarian lasagne!. make lasagne the normal way but instead of using the mince meat, cook some meditteranean vegetables (aubergine, courgette, red peppers etc) and then put them in a garlicky tomato sauceWww@FoodAQ@Com
