Good pasta sauce using kale?!


Question: Good pasta sauce using kale!?
I need a vegan pasta sauce that uses kale in a way which would make it difficult to taste the kale in it!.

Reason being, I have a toddler that loves her fruits and veggies (and I'm darn proud of it) but kale is, let's face it, a really hard sell to a sly little girl!.

Vegan if possible because I'd like it to be something I can eat too!.

P!.S!. Any other way to disguise kale is appreciated as well!. No horrid kale chocolate vegan cookies though, I have tried and repented for my error!.

Tofu and Kale Quiche

1/2tsp canola oil
3/4cup chopped green onion
12oz firm tofu, crumbled
1!.5 cup packed finely chopped Kale
1!.5cup grated soy cheese
3/4cup chopped red bell peppers
3/4tsp turmeric
3/4tsp salt
One 9in pie shell

In a small non stick skillet heat the oil over med!. heat add the green onions saute for 3 min!. Add red peppers and all the other ingredients except the cheese, cook till the kale starts to wilt!. Remove from the heat and fold in the cheese

transfer to the pie shell and bake at 350 for 40-45min

you won't regret trying this one it is a big hit even with my none veg!. friends and a family favorite!. Now I make 2 at a time and freeze the extra in individuals for my lunch when I am alone!.!.!.!.!.!.enjoy!Www@FoodAQ@Com

You can make a great soup with pearl pasta, chopped kale, potatoes and a vegetable broth, olive oil!. Yum!.!.!.!.Www@FoodAQ@Com

INGREDIENTS

2 tablespoons olive oil
1 cup diced onion
2 cloves garlic, minced
1/2 teaspoon red pepper flakes, crushed
2 1/2 pounds kale, chopped into 1-inch pieces
2 cups fresh or canned tomatoes, chopped
1 1/2 cups vegetable broth
Salt and freshly-ground black pepper to taste
2 cups canned or cooked white cannellini beans
3/4 oil-cured black olives, pitted and coarsely chopped
1 12-ounce package pasta, whole wheat preferred
1/4 cup grated Parmesan cheese (optional)

1!. In a large heavy-bottomed skillet over medium high heat, heat the oil and saute the onion about 5 minutes, until softened!. Add garlic, pepper flakes, and half of the kale and cook about 2 minutes, stirring occasionally, until the greens are wilted and the garlic is fragrant!.

2!. Add remaining kale, tomatoes, and salt to taste, then cover and bring to a boil!. Reduce heat to medium and cook until soupy, about 15 minutes, stirring occasionally!. Add beans and olives, stirring to combine!.

3!. Cook pasta in a pot of boiling salted water according to package directions!. When al dente, drain pasta and add it to the kale mixture!. Cook about 2 minutes over medium heat, then sprinkle with Parmesan, if using, season to taste with salt and pepper, and serve!.Www@FoodAQ@Com
