Tofu for egg replacement in baking?!


Question: Tofu for egg replacement in baking!?
i have no eggs and want to bake a pumkin pie!. the recipe calls for two eggs!. my family is vegitarian and i have alot of soft tofu!. i had heard once that you can substitute tufo for eggs but didnt know if it works the same way in baking!. anyone know!? if yes then how much would i need for two eggs!?Www@FoodAQ@Com


Answers:
1/4 cup tofu whizzed in a blender until completely smooth subs for one egg!. Use silken tofu if you've got it becuase the texture will be creamier!. Add your other wet ingredients to the tofu and blend or it will be hard to combine them enough!.

In addition to mashed bananas or applesauce, you might consider 1/4 plain or vanilla soy yogurt for each egg!.

I've used all of the above, along with flax seed "eggs" and Ener-G egg replacer with good results, but it really depends on what role the egg plays in the recipes and what kind of texture you're looking for!. I've never tried a pumpkin pie, so it's a guess which would work best!. Silken tofu might make your pie denser than you're looking for!. One tofu "egg" and one pureed banana "egg" might solve that problem as bananas hold air really well and might give your pie a little more lightness!. The tofu won't add any flavor, but of course the banana will, but in a spiced recipe like pumpkin pie you may not even notice it!.Www@FoodAQ@Com

For 1 egg go for 1/4 cup soft tofu!. BUT, I don't know how it affects the taste!. It mimics the consistency of eggs but I am not sure of the taste!.

For baking, I usually use mashed banana or applesauce!. I think it's a bit better than using tofu!. Bananas and applesauce will compliment the taste of the pumpkin pie and will go along with it!. You can have 1 and half medium sized ripe banana for 2 eggs and you need to add a bit more water (1/8 cup)!. For applesauce, go for 1/4 cup to replace 2 eggs!. Www@FoodAQ@Com
