It asks for seitan, but I was just at the store and I couldn't find any!. What can I use besides it, or would it even matter if I added it!? Www@FoodAQ@Com

Answers:
You can make seitan yourself from wheat gluten, it's pretty simple!. It's a great source of protein, and makes a tasty meat substitute!.

Be sure to get Vital Wheat Gluten or very high gluten flour!.

It's generally 1 cup water to 2 cups gluten!. You get a feel for how much water to use: too little and it's rubbery, too much and you have mush!. You can knead the water out if it's too wet, so don't worry!. After mixing, just boil it for an hour, or bake it in tinfoil in the oven!.

You could use grated tempeh or minced mushrooms instead but it will not taste as good as the Seitan O'Greatness!. You should stick something in place of the seitan because it's a pretty large amount!.!.!.8 oz!. Anyway, just in case you want to make baked seitan at home, here's a great recipe!.
