Strictly speaking, 'soymilk' is not true milk!. Milk is what mammalian animals produce!. The law dictates (at least in the UK) that 'soymilk' is an incorrect/misleading term!. So it's often called ''soy alternative to dairy milk'' in the shops!. But even so, ''soy milk'' is just a term used for quick, easy reference!.Www@FoodAQ@Com
Simple, it is made of soy, and it is supposed to be a substitute for milk!.
Same as "Veggie Burgers!." They're made of veggies and they are supposed to be a substitute for burgers!.
I would suppose that you would also want milk to be renamed "t!t juice" as it is liquid from something that was squeezed - much like an orange and the resultant orange juice!.!.!. ;-)Www@FoodAQ@Com

Marketing my dear!.
Imagine the money that was made with that idea!?
Who would buy soy juice as a sub for milk!?
Who would even imagine it would be a sub if it were labeled juice!?
Ergo, soy milk, rice milk, almond milk etc etc!.
Good question though!.
Some fun humor there -:)Www@FoodAQ@Com
