I, too, was raised in a meat eating family!. Once I made the decision to become veggie, 21 years ago, there was little to choose from beside tofu!. Now, large grocery stores, like Whole Foods will carry Veg meat-like items!. The first time I served an unchicken pattie for my son, he spit it out and calmed it was real chicken!. Good veg brands are Morning Star, Boca, Quorn, and Amy's brand of prepared "TV dinner" foods!. I would buy a basic veg cookbook, maybe the one by Linda McCartney!. It will explain more than the recipes!. It talks about reasons to become a vegetarian!. It takes some time, but your health is worth it!. My son was 9 years old when we became vegetarian and he is now 6 feet and 175 lbs!. It doesn't hurt children to grow up vegetarian!. also on line you can search for veg recipes and will find many a site dedicated to veg/vegan recipes!. I am now learning how to take a regular recipes and use the veg products available today as the meat substitute, like Chicken Tetrazzini!. I use Quorn pieces for the chicken!. For seasoning, there are also powdered un-chicken and un-beef broths!. They make soups awesome! Good for you and good cooking!.Www@FoodAQ@Com

vegetarian (also vegan) lasagna (good if you like middle eastern food)

make your favorite spaghetti sauce, omit meat (can use prego or whatever too)!.

mix together chickpeas, lemon juice, lots of garlic, tofutti if you can get it, or sour cream if its not vegan!. blend together in food processor!.

mix together chopped up olives, artichoke hearts!.

have fresh spinach at hand, and also lasagna noodles, the kind you dont need to boil!.

grab a large oven proof casserole dish, sprayed with pam!.

first layer is a little of the spaghetti sauce!. then layer of noodle, then sauce, then chickpea mixture, then spinach layer (lots) and artichoke/olive mixture!. keep repeating until you run out of food!.

on the top, either a good strong parmegian, or a healthy covering of nutritional yeast if vegan!.

bake covered in 350 oven for about an hour, then take off tinfoil and bake additional 15 minutesWww@FoodAQ@Com
