I am making lasagna (vegan) for dinner but I'm out of tofu and spinach! What can replace spinach?!

eggplant! simply cut it, salt it and drain it!. im a turnip green fiend (im southern american) and keep cans of it hoarded for this very purpose, its like spinach but i prefer its flavor to any other leafy green!. try also bay leaves and basil!. Www@FoodAQ@Com

If you want something similar to spinach, any dark leafy greens will work in its place!. I've used collards before!. But otherwise, you can use almost any vegetables!. Broccoli & zucchini would be delicious, even peas or string beans!.!.!.endless possibilities!. I'd be more concerned about being out of tofu!. What are you using for filling, or "cheese"!?Www@FoodAQ@Com

basil, or any other veggie!. you can simply leave out the tofu, or even both and go on with the lasagna!.

Leeks can!. My family likes to make leek lasagnas and quiches!. They're a great replacement!. You can also use basil if you want or even broccoli!. Www@FoodAQ@Com
