I haven't tried this before, but I've tweaked it so it's easier & cheaper to get the ingredients and have added instructions for the creamy cashew topping! I'm trying it out for my girlfriend's birthday this Sunday!.
Raw carrot cake
Ingredients:
1 cup pineapple (or apple), finely chopped
? cup apple, finely chopped
2 cups fresh carrots, peeled and grated
1 cup dates (or raisins), soaked and minced
1? cups almonds (or cashews), ground
? cup apple, peeled and grated
2 tablespoons orange or grapefruit juice
2 tablespoons carob
1 tablespoon cinnamon
1 teaspoon nutmeg
? teaspoon cardamom (or ginger)
? teaspoon sea salt
For the Frosting:
1 1/3 cups finely ground raw cashew nuts
2 cups finely chopped Mejool dates
1/4 cup maple syrup (molasses)
? cup fresh lemon juice
Preparation
1!.Dehydrate pineapple and choppped apple (not grated) for 8-10 hours or until no longer wet to the touch!.
2!.Place all ingredients into a mixing bowl, and mix thoroughly!.
3!.Either form into bars or spread mixture out on a Teflex sheet and score with a spatula!. Dehydrate for 10-12 hours at 105 degrees, or until soft and cake-like!.
4!.Frost with Creamy Cashew Icing, if desired!. You can even make several cake layers, and frost between and on top, for a fancier cake!.
5!.!. Make the frosting!. In a blender or food processor, blend the ground cashew nuts, dates, lemon juice and maple syrup until creamy!. Spread over the filling and chill in the refrigerator for 30 minutes before serving!. Serve cold!.

2c soaked cashews
1c pitted dates
1c raisins, unsulphured
2 heaping T carob powder
1/2c fresh pineapple juice
1/2c distilled water
1c flaxseed meal
1c chopped walnuts
Drain cashews and put in blender or processor with dates, raisins, carob, juice and water!. Process to thick paste!. Stir in flaxseed meal and water!. Press onto ungreased cookie sheet and freeze for 2 hours!. Cut into squares and store in the freezer!.

Tastes Like Hostess Crumb Donuts
1 cup raw almonds
1 cup very soft, pitted dates
1/2 cup finely shredded banana squash
1/2 cup shredded coconut
more shredded coconut for rolling
splash olive oil
vanilla
1-2 tablespoons nutmeg
sea salt
Put almonds in food processor and process to very fine pieces!. Add dates, a little at a time!. Add splash of olive oil, a little salt and a little vanilla!. The mixture will look like very coarse meal at first, and then all of a sudden it will come together in one big ball!.
Take the big ball out of the food processor and, using your hands, mix in the shredded squash, the nutmeg and the shredded coconut until it is all mixed in!.
Roll the mixture into small balls, and roll in shredded coconut to cover!. Place on a plate in a single layer and chill in the freezer until firm!. After they are firm, you can put them in a container; they will keep for a very long time in the freezer!.

4 Cups corn
1/2 Cup shoyu
1/2 Cup water
1/4 Cup chopped onion
1 T minced garlic
2 T taco seasoning
2 T chili powder
1 - 2 T nutritional yeast
Blend well in food processor and spread on Teflex Sheets and dehydrate!. When you flip them sprinkle with a mix of the following: 1/3 Nut Yeast, 1/3 Taco Seasoning, 1/3 Chili Powder!.Www@FoodAQ@Com

Tomato and onion salad!.!.take a couple of ripe tomatoes and slice thinly, layer on a plate with thinly sliced onion ( I like to use red onion for this but anything will do except the sweet white ones) and garlic, sprinkle with a little black pepper as you go!. Let it stand in the fridge for a couple of hours and the pour over a dressing made from two parts olive oil and one part balsamic vinegar just before serving!.
Tomato salsa!.!.
This really is better fresh than bought and can be used to make other things!.!.
Half a dozen full sized ripe tomatoes,
two celery stalks
one red onion
three or more cloves of garlic
one fresh jalapeno chili or half of a small one ( the smaller the hotter)
one sweet green or yellow pepper
a bunch of basil leaves or two to three teaspoons of red or green pesto!.
Put everything into your food processor, starting with the chili and garlic, and pulse the chopping action until it is a fine mince with tiny shreds of chili in it!. Pour into a bowl and chill for a couple of hours, season to taste and serve with crackers or chips or simply eat it by the spoonful!
You will find that as it stands the mixture separates with a clear liquid rising to the top!.!.simply stir it back in for salsa or, strained the mixture for a couple of hours and serve the liquor as a cold drink or a hot broth or hot or cold in a bowl with a spoonful of the vegetables put back in!. If you decide to use it this way you will want to increase the quantity of everything !.!.try with the salsa and then experiment until you know where you are, it makes a great dinner party starter!.
