There are analogues you can buy at Whole Foods or natural foods stores!. There are also online retailers of analogues!. You can also make your own seitan (which I recommend you do)!. Seitan is also known as wheat meat and has a dense, chewy texture!. Get the Arrowhead Mills Vital Wheat Gluten to make your seitan!. The instructions are on the back of the box, but don't use plain water to simmer!. I mix water with some tamari, nutritional yeast, and seasonings!.

Check out "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson for hearty meat-free recipes!. I use a different recipe for seitan but keep experimenting until you find what works for you!.

If you cook with tofu, freeze it beforehand (check my profile for tips) for a chewier texture!. And check out tempeh, a fermented soybean product from Indonesia!. It's got a nutty, chewy texture!. It's also good crumbled in a chili!.Www@FoodAQ@Com

Vegetarian chili is so delicious and hearty that you never miss the meat!. i include lots of base flavorings (onion,garlic,celery,peppers and chipotle peppers add a great smoky flavor) and sautee the spices in with these after they have "wilted"!. The other trick I use is adding salsa instead of plain diced tomato for even more flavor!. I prefer the chili with two types of beans and no tvp but, I know many like the tvp as an additional protein and filler!.Www@FoodAQ@Com

I only cook vegetarian at home because my bf is, but I actually put together a vegan cookbook!. It has a ton of recipes, it's 144 pages!. When the recipes call for vegan cheese, vegan meat substitute or egg substitute, you can just use vegetarian meat substitute, regular cheese and real eggs instead!. It's in pdf format and searchable, it's meant to either be printed and put double sided into clear sheet protectors in a binder or just used from the computer!. If you want to use a specific ingredient, just do a search in adobe reader and it should find all of the references to that word!. It's 17mb so you'll want to save it and not just open it from the browser!.

I like to make my own seitan at home!. Seitan is basically a meat substitute made out of wheat gluten and other ingredients!. It's really good and goes well in a lot of dishes!.

I love it because you can eat it plain, slice thin for sandwiches, cut into pieces for curries, etc!.
