Question: Please provide recipe ideas for a really tasty and exciting vegetarian lunch!?
I'd like to invite my brother and his wife over!. They are both vegetarians!. I don't have a food processor!. Ideally I want something reasonably easy and simple but impressive and tasty - doesn't have to be all that simple because I like cooking!. Ideas for desserts would be greatly appreciated too!.Www@FoodAQ@Com

make falaffel! its delicious and pretty simple to make!. you can buy the mix in a box and follow the very simple directions!. something non-vegetarians will enjoy also!. you fry the falaffel patties (or balls, whichever you prefer) and put them in a pita with lettuce, tomato, onion, cucumber and tahini sauce - a simple dressing that also yummy and easy to make!. and for dessert, seven layer bars!. get crushed graham crackers, shredded coconut, butterscotch chips, chocolate chips, a can of condensed milk and walnuts!. put about 2 tablespoons of butter in a 9x9 baking pan and melt it in a 350 degree preheating oven!. then layer the graham crackers down first to make a crust, then layer coconuts, butterscotch chips, chocolate chips, and walnuts!. then drizzle the condensed milk over the entire thing to seal it all together, and bake for about 20-30 minutes!.!.!. until the coconut starts to lightly brown!. my mouth is watering!.!. whens lunch!? can i come!?!Www@FoodAQ@Com

1 cup all purpose flour (Maida)
Water to Knead dough
2tbsp oil
Little salt
1/4th tsp!. Ajwain (optional)
For Stuffing:
3-4 Potatoes (boiled, peeled & mashed)
1/2 cup Green Peas (boiled)
1-2 Green Chilies (finely chopped)
1/2tsp Ginger (crushed)
1tbsp coriander finely chopped
Few chopped Cashews (optional)
Few Raisins (optional)
1/2tsp Garam masala
Salt to taste
Red chili powder to taste
1/2 tsp!. Dry Mango powder( Amchur) (optional)


How to make samosa:


For Cover:
Mix all the ingredients (salt, oil, ajwain) except water!.
Add a little water at a time!.
Pat and knead well for several times into a soft pliable dough!.
Cover it with moist Muslin cloth and keep aside for 15 minutes!.
For Stuffing :

In a bowl add mashed potatoes and all dry masalas (salt, chili powder, mango powder, garam masala) and green chilles, ginger and Mix well!.
Add green peas, cashews and raisins and mix well!.
Add coriander and keep aside!.
To Proceed :

Make small rolls of dough and roll it into a 4"-5" diameter circle!.
Cut it into two parts like semi-circle!.
Now take one semi circle and fold it like a cone!. Use water while doing so!.
Place a spoon of filling in the cone and seal the third side using a drop of water!.
Heat oil in a kadhai and deep fry till golden brown (fry on a medium flame)!.
Serve samosa hot with hari chutney, tamarind chutney!.

Stir fry, egg rolls or wontons with vegie ingredients and tofu are all delicious!. Mediterranean meals are delicious too!. Falafel, tzatziki and hummus with warm pita, feta and fresh chopped tomatoes, cukes, lettuce, so yummyWww@FoodAQ@Com

I would start with a fresh cream of tomato soup or cold gazpacho, then a zuchinni fritatta served with a melon,mint & feta salad!. For dessert a fresh apricot tart!.Www@FoodAQ@Com
