Foods for Vegetarians?!

Question: Foods for Vegetarians!?
I'm a vegetarian, but an EXTREMELY picky eater!. If anyone could tell me some good foods or recipes I could use to help me become a more healthy vegetarian (as I'm lacking in energy and not getting enough protein) it would be GREATLY appreciated!.

PS!. I don't like tofu!.Www@FoodAQ@Com

I absolutely love morning star products and the cheapest place to purchase them is at Target!.

Here's a really easy recipe I enjoy!. It's a vegetarian casserole my boyfriend got from his church!. I make this dish at least two times a month!.

Ingredients:
1 Can Cream of Mushroom Soup
1 8 oz Can of Tomato Sauce
2 1/2 cups of mixed frozen or fresh vegetables
1 8 oz Can of Dark Red Kidney Beans (drained)
Enough Tortilla Chips to top the casserole
1 cup of Mexican cheese or Soy cheese

If using frozen vegetables, cook these first and drain!.

In a 8x8 inch baking dish combine 1 can Cream of Mushroom Soup, 1 8oz can of tomato sauce, 2 1/2 cups of mixed frozen or fresh vegetables and 1 8 oz can of Dark Red Kidney Beans!. Mix well!.

Crumble tortilla chips and cheese on top of casserole and cook at 375 degrees for 30 minutes or till you begin to see the dish nicely bubbling!.

Let cool for 10 minutes!.

Dish taste best if served over white long grain or short grain rice but can be used for the filling of a burrito!.

Subway's Veggie Pattie Sandwich is also a great Vegetarian (not vegan though) healthy choice!.

Oh! Before I forget this is one of my other favorite recipes:

Grilled Eggplant Tomato Sandwich

Instead of fetta cheese I use mozzarella and also mix olive oil and garlic with a sliced up red bell pepper and sweet yellow onion then broil these at the same time as the eggplant!.

Spaghetti squash is good!. Cut it in half, put in a shallow microwaveable dish, fill with with 1/2 inch of water and cook in microwave for 3-5 minutes, check to see if it's done, you can take a fork to it, and if it shreds easily, it's finished!. Looks like spaghetti noodles!.

You can top with your favorite spaghetti sauce, or with a little Olive oil, capers, salt & pepper and parmesan cheese!.

Veggie Burgers are good, I eat these all the time, with baked tater tots!.

Sweet Potatos are good, roasted or baked!.

You can make a meatless chili, and top a baked potato!.
