I don't know about hamburger consistency, but if you want your tofu to have a tougher, meatier texture, try freezing it!. After it thaws, the texture will be much more meat-like, and you can use it in the same way that you normally would!.Www@FoodAQ@Com

The poster who mentioned freezing tofu has it correct, too!. I also fry it after freezing to make it chewier!. But to get anything like hamburger you're going to need one of the first two!.Www@FoodAQ@Com

try using tvp (textured vegetable protein) instead!. I'm not sure you can make tofu into hamburger consistency!Www@FoodAQ@Com
