Most canned soups are more expensive than making the soup yourself and freezing the leftovers!. That also have a huge sodium content, so arent the best for you!.

Beans are inexpensive!.

This is a site that caters exclusively to vegetarians!. I'd suggest shopping the sales slips, farmers markets and internet to feed yourself while you're poor!. It doesnt limit you, it just takes more planning and research of whats available in your community during different times of the year!.

You can afford beans as well!. Beans are cheaper than soup, especially if you soak and boil them from dry instead of buying cans!. Even canned beans are cheaper!. Whole rice (not white rice) and beans together are a complete protein!.

You sill still need some veggies and fruit, but those can be obtained cheaply if you know where to look!. Farmer's markets are a great bet!. If there isn't one near you, then learn to shop specials and figure out what is in season!. Furthermore in big supermarkets there is usually a section with discount produce!. This may be discount because it has to be eaten right away, or possibly because it has a little bruise!. You can cut away the bruises and eat them raw, or make the fruit into fruit compote, just simmered with some cinnamon, water and sugar!. Usually there are apples in the discount area, and those can be turned into homemade applesauce, baked apples, or even pies!. Premade pie crusts are pretty cheap!.

Well you can live off of this, but it's not the healthiest thing!.
Soup is a good food to help keep weight off, but canned soup has too much sodium and not enough fiber!.

I would like to suggest that you might be able to afford more than you think!. I don't know where you live, but in the areas where I live and have lived there are usually fresh produce markets!. They sell their produce for prices lower than what you find at the grocery store!. We have a flea market in South Carolina that has a Mexican produce market!. I can actually buy lettuce for 99 cents/head, avocados for 75 cents, cilantro for 50 cents, a basket of Roma tomatoes for $3!.00!. I can spend $15 and get a ton of fresh veggies to munch on for a week!. Buy a big pack of frozen chickens breasts and pull one out a time and you've got a feast!.Www@FoodAQ@Com

Well, if you mean broth or ramen noodles, no!. But soup can be full of veggies, whole grains and legumes, so it can definitely be a balanced meal!. Canned soups are too full of sodium, though!. You're better off making your own and putting fresh ingredients in it!. A soup with beans, barley, carrots, celery, onions with some spinach wilted in could be really good and filling provided you season it nicely!. I don't think ramen noodles by themselves count as sustenance, as they have little nutritional value!. But for a fast, cheap meal, add in some greens and veggies (frozen or fresh) like spinach, bok choy, sliced carrots, peas, etc!. and serve with a hardboiled egg!. That would make an alright meal - not ideal, but it would be a lot better for you than just the ramen!.

Soup alone you can obviously survive off of - people in concentration camps and famine ridden places have survived on much less!. The question is whether it is healthy to do so and whether you will come out of it malnourished!. Remember that hospital bills are far more expensive than groceries!. If you are going to try to live off of soup, make it from scratch and load it with vegetables!. also try to make different types of soup fairly frequently!. Variation is the key to a good diet!.

Vegetables by themselves are not very expensive - it is packaged products that really add up!. Eating a simple salad of greens and carrots is very inexpensive - especially if you mix oil and vinegar for the dressing instead of buying a bottled one!. Supplement salads and fresh veggies and fruits with soups, stews, and whole grain products!.

Rice is very inexpensive (brown is better for you) and easy to make!. If you cook it with some herbs and butter or oil, or make a pilaf by adding carrots, peas, and other veggies, that can be a main dish along with a side salad or piece of fruit!. Nutritious, easy, and cheap!. You can also beat an egg or two quickly into freshly made rice to add some protein and make a more filling dish (if done fast enough it will simply leave a shiny coat on the rice)!.

Another thing I've found is that frozen veggies are a good economical investment!. Buy a bag of mixed vegetables like peas, carrots, corn, and green beans and add a cup or half a cup into rice or pasta dishes to get some valuable nutrients without the work or expense of buying those veggies fresh!.

Another great food - oatmeal!. Oatmeal is dirt cheap, easy to make, and very good for you and very filling!. Buy a big tub of old-fashioned oats and enjoy with some raisins or fruit over top, or by itself!. A great breakfast or quick meal anytime!.

Beans and lentils are also really good staple foods!.

If you're going to try to live off soup alone, my advice would be to make at least two large batches of soup a week!. Make one that is a lentil or bean soup or stew, and another that is a vegetable soup or stew!. Those should last all week if you supplement them with rice dishes, salads, and oatmeal!.

Make your own soups and you will be fine!. A little meat goes a long way, buy the cheapest vegetables you can find, cook everything at a low simmer for at least 45 minutes!. Soups are the ultimate frugal food, you use the anything that is at hand to make them and all of the nutrition stays in the pot for you to eat!.Www@FoodAQ@Com

Black Bean Soup


When you are in the mood for a classic, creamy black bean soup pureed and seasoned with coriander and fresh lemon overtones, here is the recipe that will get you rave reviews, if not a standing ovation, in your vegetarian kitchen!.
Ingredients:

2 quarts RO Water
2 Cups Black Turtle Beans
1 Spanish Onion Chopped
1 Carrot Diced
1 Stalk Celery Diced
5 Bay Leaves
2 tsp!. Sea Salt
2 quarts RO Water or Stock
4 Tbs!. Tamari
1 Tbs!. Ground Coriander
Sea Salt to taste
Juice ? Lemon and Lemon Slices
Freshly ground Black Pepper to taste

Method:
Pick over Black Turtle Beans removing those that are broken and any stones!. Soak for 6 hours or overnight in the refrigerator!. Cut Onion, Carrot and Celery into small pieces!. Add them to the pot along with Black Beans, Bay Leaf and Stock or RO Water!. Simmer until the beans are very soft; about an hour and a half!. Add Salt, Ground Coriander, Tamari and Black Pepper!. Using an immersion blender, process until pureed!. Return to heat!. Stir in the Lemon Juice!. Adjust seasonings!. Float Lemon slices on top!. Serve!.

Cold Creamy Watercress and McIntosh Soup

Cold Creamy Watercress and McIntosh Soup is a light and lovely soup for those blistering days of Summer and Sunday Night Suppers in your vegetarian kitchen!.
Ingredients:

Melt 3 Tbs!. Butter in a saucepan
Dice and add in order
2 Medium Onions
2 Stalks Celery
4 Small Yukon Gold Potatoes
1 McIntosh Apple
Add to
6 Cups Parsnip Stock
2 Cups Watercress (plus several sprigs for garnish)
2 Cups Manitoba Hemp Milk
1 McIntosh Apple for Garnish

Method:

Sweat Onions and Celery in the melted butter for five minutes!. Add the diced potatoes and Parsnip Stock!. Cover, and simmer until vegetables are tender!.
Add diced Apple and cook for five minutes!. Add Watercress and cook for a minute until it wilts!. Remove from the heat immediately and process until completely creamy and green!. Chill thoroughly!. Add Hemp Milk and chill for half an hour!. Grate ? Apple into the soup!. Pour into serving bowls and garnish with apple slices and sprigs of watercress!.

Golden Broth

Golden Broth is a great substitute for “chicken broth” in your vegetarian kitchen when preparing vegetables for soups and sauces!.
Ingredients:
1 Spanish Onion Chopped
2 Cloves Garlic Minced
2 Tbs!. Canola Oil
? Cup Yellow Split Peas
1 Small Carrot Minced
1 Small Potato Minced
1 Tbs!. Celery Minced leaves included
1 Tbs!. Parsley
? tsp Turmeric
1? tsp Sea Salt
Pepper to taste

Method:
Sauté vegetables in the oil until golden and tender!. Add Turmeric!. Add RO Water, Sea Salt and Pepper to taste!. Simmer for an hour on a low flame!. For a Consommé or thin broth strain the soup through a cheese cloth!. For a thicker broth process the broth and vegetables in a food processor!. Use immediately or store in a covered jar!. Or use as a base for Carrot Flowers, and Snipped Spring Green Onion!.

Parsnip Stock

Parsnip Stock is an exceptional vegetable stock of natural sweetness that is very easy to prepare in your vegetarian kitchen!.

Ingredients:

2 Tbs!. Canola Oil
2 Large Onions chopped
2 Medium Carrots diced
I Large Parsnip chopped
2 Stalks Celery chopped
2 Bay Leaves
? tsp Celery Seed
1 Large English Cucumber peeled & chopped
2 Quarts RO Water

Method:

Heat the oil in a large pot!. Sauté the Onion, Carrot, Parsnip and Celery!. Simmer for 10 minutes in covered stainless steel pot!. Add the rest of the ingredients and bring to a boil!. Lower the heat and simmer for an hour and a half!. Strain through a cheesecloth!. Discard the vegetables!. Return the stock to the pot!. Heat over low heat reduce the liquid to 6 Cups!. Reserve!.

Mushroom Barley Soup

Mushroom Barley Soup is a really hearty and delicious soup for cold winter days fresh from your vegetarian kitchen!.

Ingredients:

4 Cups Mushrooms
2 Tbs!. Minced Garlic
4 Tbs!. Extra Virgin Olive Oil
2 Cups Diced Onion
1 Cup Minced Celery
? Cup Carrot Flowers
1 Cup Pearled Barley
2 Quarts RO Water
3 Fresh Bay Leaves
? tsp!. Celery Seed
3 Italian Tomatoes Rough Chopped
1 tsp!. Sea Salt

Method:

Place all of the ingredients into a large stainless steel pot!. Simmer until the barley is cooked and veggies are tender!. Add ? tsp!. each Fresh Thyme, Basil, and Oregano
2 tsp!. Fresh Ground Black Pepper and a splash of Tamari to taste!. Adjust seasoning!.
