Question: I would like to know about seasonings for all kinds of vegetables, I can no longer use salt, what do I use!?
I am use to using pork fat and ham and salt to season my veggies!. I am looking for suggestions for all kinds of veggies!. We eat a lot of them!.Www@FoodAQ@Com

Your cooking doesn't need to suffer because you can't use salt!. Acids such as vinegar or lemon juice can be used as a replacement for salts, and lemon pepper is an especially good replacement for salt and pepper!.

If you're used to using animal fats for seasoning, you'll probably want to replace them with other foods that are high in umami (the technical term for the "savory" taste)!. Foods with a lot of umami are Mushrooms, Asparagus, Fish, and Soy Sauce!. If you can find a no salt soy sauce, it would be a good addition to your spice rack!.

When I cook veggies, I end up putting a lot of cumin, chili powder, onion powder, garlic, basil, and oregano on my veggies!.

When you get a new spice, it's a good idea to try and use it in a lot of combinations for a while, until you get used to it!.

In short:

Acids (vinegar, red wine vinegar, or lemon juice)
Umami (Soy sauce, mushrooms, asparagus, or fish)
Cumin
Chili Powder
Onion Powder
Garlic
Basil
Oregano


P!.S!. If you can't use salt, spicy hot is the best flavor choice!. Spicy foods suffer less than savory or rich foods from a lack of salt!.

Depends on what you're doing with it!.
Roasting, I like Cajun seasoning, lemon/parmesan/garlic, lemon/cracked pepper/olive oil!.
Au gratin is good!.
Oyster sauce & soy sauce is good for sauteed greens!.
Greens, zucchini or onions are good baked in tomato sauce!.

well if im doing spaguettie for my lunch i always use pesto sauce !!!!
they made of spinacks or basil and soy cheese (if u like to)
also use garlic and mustard for seasoning!!!!! red-yellow pepper are good too
tomatoe paste/sauce are another good option

Basil goes well with tomatoes, Italian herbs in soups and casseroles!.
