* 2 cups fresh basil leaves
* 1/2 cup olive oil
* 2 cloves of garlic, minced
* 2 tbs of pine nuts or walnuts
* 1 tsp salt
* 1/2 cup grated parmesan cheese!.

you can take out the parmesan cheese!. but it wont taste the same

changing the parmesan to soy cheese would be the same as if you changed it to edam cheese!. Won't be the same anyhow!.Www@FoodAQ@Com

Pesto doesn't usually have cheese in it, though there are many recipes in which both are used!. I buy frozen Armanino pesto, which is made of basil, pine nuts, oil, and some other herbs!. I use it in a delectable dish I learned from a friend who got it from an old Italian lady he knew when he was a kid in Chicago:
In three separate pans, prepare approximately equal quantities:
1!. Saute Italian sausage
2!. Boil rigatoni
3!. Boil broccoli florets
When all are done, mix them together and add pesto and (if you like them) a minced anchovy or two!.
A quick and delightful one-dish meal!.Www@FoodAQ@Com

Pesto is pretty easy to make, even easier if you have a food processor!.

The general recipe is basil, garlic, parmesan cheese, nuts (traditionally pine nuts, but you can use walnuts, pecans or almonds) and olive oil!.

If you want a good starter cookbook, I'd strongly suggest the Joy of Cooking!. You can find it at any book store or online!.

Don't use soy cheese!. Don't use processed foods in general!. Use real food!.

You'll also find that basil and other herbs are very expensive at the store!. Try going to your local home and garden store and buying a few potted herbs!. Much cheaper!.Www@FoodAQ@Com

traditionally it is made with parmigiano-reggiano cheese, a hard cow's milk cheese!. I don't know anything about soy cheese but if you like it then I don't see why not!?Www@FoodAQ@Com

i dont use any cheese watsoever!. there are pine nuts in it which is good enough for meWww@FoodAQ@Com
