Seitan "buffalo wing" help and prep advice?!
Hey gang! I found a tasty-sounding recipe for vegan "buffalo wings" using seitan!.
I made the seitan last night and per the package instructions, I'm storing it in it's broth in the fridge!.
The recipe calls for me to make the wing sauce, dip the seitan in it, dredge it in flour and pan fry the pieces!.
It never says that I should drain off (or squeeze out) the excess liqiud from the seitan!. I'm thinking that the broth it's sitting in combined with the sauce AND the oil from pan frying would make them way too wet and gross!.
Does anyone have any advice/experience with this!?
I was thinking of using a cheese cloth and gently draining out the excess moisture, but I don't want them to be too dry either!.
While I'm no stranger to seitan, I'm a novice with frying it!.

No need to "squeeze" the excess fluid out!. I do typically pat dry the seitan before cooking with it though!. And knowing I like my "wings" hot, the less liquid prior to dipping in the hot sauce, the more hot sauce there will be; in other words don't dilute!.
I do often use that excess liquid to make gravies when substituting the seitan for a "meat" and potatoes meal!. It is healthy, and if you use kombu (a seaweed) in the liquid there are many reasons to use that broth for other sauces or broths!. Www@FoodAQ@Com
I think your confusing seitan with tofu!. There is no need to purss liqiud out of seitan!. Unlike tofu seitan has a 'meaty' flavor of it's own, that is why it is often called wheat meat!.

I am not familiar with seitan, but not unfamiliar to cooking!.
Since i lack experience i would say have one trial "buffalo wing" and see how it comes out with out draining!. it may need the moisture so it does not dry out in the frying!.
You could also put them in a strainer to let any superfluous liquids run off and allow the rest to stay inside the food!.!.

I am a former chef and use both seitan and tofu, and a gentle pressing will make them firmer, as for the sauce, if your eating dairy then the sauce is butteer, a hot sauce of your choice, a dash of garlic (either salt or powder, even a chopped/pureed product is fine), you could let them sit in the sauce before the flouring and frying, I would use a non stick pan with a spitz of oil only to make them not a greasey!.
If you do not eat dairy a good vegan or non dairy margarine is your choice, even add a few breadcrumbs or corn flake crumbs for the coating for a most crunchier taste, keep some of the sauce aside to add or top when they cooked, or just sprinkle with the hot sauce alone when done!.Www@FoodAQ@Com
