For your protein, things like tofu, beans, cheese (if you are not vegan), and prepackaged veggie burgers or other dishes are great!. Tofu can be a bit difficult to work with, but don't be afraid to experiment!. also there are many good recipes for it on the internet!. To begin, you can't go wrong if you marinate it and use it in a stir-fry!.
Good fats are avocado (I love it, it is great in sushi, sandwiches, and guacamole), olive oil (try using that with a stir-fry), and again cheese if you eat it!.
For fiber, your options are unlimited!. Many breakfast cereals have a lot of fiber, such as shredded wheat or oatmeal!. Eating plenty of fruit and veggies will take care of this for you!.
also, an issue as big but less-known than the protein issue with vegetarianism, is iron!. Either take an iron pill or eat lots of spinach and other leafy greens so that you don't become anemic and weak!.
A good thing to do for food inspiration is look to Asian food, especially Japanese!. There is so much great (and vegetarian, incidentally) food in this cuisine!.
Hope that helps =)Www@FoodAQ@Com
