Camping or backpacking!? Do you need food for 1 day or several!? Will you have the ability to build a fire and cook!? Or not!?
There are so many questions to consider in order to answer your question!.
For a day trip and an overnight camping/hiking trip where you want to keep things light weight and protein packed -- pack trail mix and dried fruit, take some electrolyte powder such as Want More Energy!? and individual packets of either Rich Chocolate or French Vanilla Isalean Shake or some other protein powder drink to mix with H2O for a meal!.
You can prepare and freeze tofu salad sandwiches, or some Phony Baloney and Vegan Rella sandwiches and carry them along for the first meal -- they will thaw and still be cool and tasty then!. PB&J or Almond Butter and Jam!. Keep it simple and tasty!. No need to do asparagus crepes with mock hollandaise over a campfire -- though I have done it just for fun!.
Nori Maki -- Brown Rice Balls with Wasabi and Umiboshi Plum Paste and sesame seeds rolled in Nori, are excellent!. They keep fairly well and are totally nourishing!.
Of course if you are packing for an extended trip then check out REI for their vegetarian alternatives in their dehydrated packaged foods -- just add water and heat -- packs!. Hot chocolate!? Cheese!? Almonds!
And have fun!

S'mores! They can't be made the traditional way, obviously, but marshmallow fluff (unlike marshmallows) are vegetarian!. My sister and I make s/mores with the fluff and chocolate between the graham crackers, wrap it in foil and put it on the coals of the campfire for a couple of minutes!.
I do something similar with baked apples, coring an apple, stuffing with butter and brown sugar, wrapping in foil and putting it in the coals for half an hour!.
Morningstar hotdogs can be roasted over the campfire!.Www@FoodAQ@Com

quorn or meat substitutes are easy to cook [if you have a stove or portable/disposable bbq] - they do keep for like a day depending on how long youre going
dry foods, cereal, pastries, chocolate [:
hot drinks
depends if your going with friends or like a proper trip
if your with friends just take junk food and drink
if its a proper trip you need actual meals
just take what youd eat at homeWww@FoodAQ@Com
