Hi Pony, I buy a block of firm tofu (beech smoked is great) I wrap it up in a cloth and gently squeeze as much liquid as I can out of it, I would not recommend freezing it as it changes the structure and makes it grittier!. I then marinade it in tamari ( wheat and yeast free soy sauce) and curry powder for as long as I can ( best done overnight but I have been known to cook it straight away)
You can then bake it in the oven till it forms a very satisfying chewy crunchy exterior (I prefer to bake because frying never gets the same result one bits always burnt !.!.!.and tofu is high enough in fat content at nearly 40 %) I would serve it anyway that feels good, in a bun with ketchup and salad!. with rice and onion gravy, or with a plate full of red kidney beans!!!! have fun experimenting but enjoy:-)Www@FoodAQ@Com

I might be committing vegetarian blasphemy when I say this, but tofu will never, ever have the consistency of meat!. It can be made firmer and chewier by pressing, freezing, and cooking in the driest heat possible!. I don't particularly like the freezer treatment though because of the effect on texture!. My suggestion is to learn to enjoy tofu as tofu and not as a meat replacer!. I usually buy a brand that is pre-pressed and use it as is!.

If you really need a meaty texture there are better options!. TVP will replace ground beef easily!. Seitan (gluten) when prepared properly is much more meat-like than tofu and is in many meat substitute products in combination with soy which are very close to meat!. The absolute best meat alternative in my opinion is gardein!. It's not available directly in retail, but you can find it in other manufacturers' products!. It was a long time in the making, but it really captures the essence of meat down to the bite and the grain!.Www@FoodAQ@Com

To get TOFU Really firm, take it out of it's container, then press as much liquid out of it as you can with out harming it!. Then freeze it!. Then once you thaw it out it will be much springier!. You can then marinade it in whatever you like!. Soy sauce, Braggs, olive oil and many herbs, like cumin, tumuric ( this one keeps it from getting too soft) curry, chili's!.
Always add some good pressed garlic too!. The list goes on!. After that you can grill, bake or fry! Keep experimenting and look up veggie food online at recipe sites, that always helps too!. Www@FoodAQ@Com

There are many types of tofu!. Some more firm!. some like crumbling jelly!. I suggest that you try shopping around!. buy firm tofu!.

also i have tried other vegetarian bean-curd products that are much like chicken in consistency!. this can be disturbing for some vegetarians! But the products are out there on the shelves somewhere!.

I like Tofu Cutlets!. There are a few variaties!. marinated!. firm!. and they are ready to eat out of the packet, if you don't want to heat them!. yum!.

Happy shopping!. Www@FoodAQ@Com

I don't like mushy food, and for that reason always freeze tofu before eating it!. My favorite way to fool meat eaters is to freeze, thaw, cut into strips, and use a good Asian marinade, then stir-fry over really high heat!. Www@FoodAQ@Com

you want to make sure you get extra firm or firm tofu!.

cook it over low heat in soy flour till brown on each side!. season with salt, pepper, and parmesan cheese!.Www@FoodAQ@Com
