Question: Does anyone have any delicious vegetarian or vegan soup recipe's!?
Looking for something that will be great now that the weather's getting chilly!. I want something other than a simple vegetable soup and it has to be something you have either made or eaten!.Www@FoodAQ@Com

Enjoy the wholesome goodness of some carrot soup:

2 pounds wholesome carrots, peeled
- 1 onion, large
- 2 medium baking potatoes, peeled and sliced
- 1/4 teaspoon ground mace
- 1/2 teaspoon ground ginger
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 2 cloves garlic, large, peeled and chopped
- 2 cups skim milk
freshly ground nutmeg for garnish (optional

In a large sauce pan, add all ingredients excluding milk and nutmeg!.
Bring to a full boil and then reduce heat and cook until wholesome carrots are tender, approximately 30-40 minutes!.
Purée in a food processor!. Return purée to the sauce pan over low heat!. Stir in milk!.
Serve warm and garnish with freshly grated nutmeg, if desired!.Www@FoodAQ@Com

Ingredients
1 T vegan margarine (you can do without if you have none)
3 small onions or 1 big onion, chopped
4 cloves of garlic, chopped
Generous handful of your favorite mushrooms (or if you'd rather, you can use 1 head of celery) chopped
2 T flour
Up to 4 cups soy milk (start with three, add to get desired consistency)
salt to taste

Fry the onion and garlic in the marg!. for a few minutes!. Add the celery and cook until softened (only a few minutes again)!. Add flour and stir well, then gradually add the soy milk over a low heat, stirring constantly!.
Stop once you've reached a nice creamy consistency, add a little salt and blend up in a blender for smoothest results or a hand blender will also do!. (this is optional, only necessary if you don't like chunky soups)

I have a glass of gazpacho soup everyday of the year!. It is a cold soup, but it is so very good for you!. It is made from tomatoes, peppers cucumber, onions, olive oil and garlic!. It is full of antioxidants and they reckon it gives you a 45% better chance of avoiding cancer!. It is especially good for combatting against prostate cancer!.
Gazpacho is not cooked, it is a raw soup so all the nutrients remain in the soup!. I must admit it isn't a winter soup where you may live, but where I live we have no frosts!.Www@FoodAQ@Com

Mmmmmm!.!.!.what's in season right now in your neck of the woods!?
We have mushrooms, and love mushroom soup!.
First of all - how many are you cooking for!? For two people take a chopped medium onion, and soften it in a little oil, putting a chopped clove of garlic just after it starts to soften!. This is so as not to overcook the garlic, cos if you burn it, it goes very bitter!.!.
Then slice some mushrooms, the more varied the better, and saute them gently in the same oil!.
Add some vegan stock, and a little vegan wine, to make up the volume you want!. Simmer till all is nice and soft, then liquidize and serve!.
Not keen on mushrooms!? Any vegetables will do!. Just be sure that you chop them to the right size to saute gently then simmer until soft enough to be pureed!. I use a stick blender!. Adapt the quanities to suit your company!.
Then heat up as wanted and eat with wholemeal bread or whatever!.
At this point, lacto-veggies can chuck in some cream - but vegan "cream" tends to be sweetened, so isn't very nice in soups!.
Lactos can top it with grated cheese, but I'm not impressed with vegan "cheese", and would rather put diced fried tofu, or else that smoked tofu that comes in pieces, I think it's made by Cauldron!.
Of course you can top with herbs, croutons and whatever else takes your fancy - enjoy!

i dont know the exact measurements because i just added stuff to the pot, but its kind of hard to screw up a big pot of soup :]

about 10 cups of veg!. broth
5 1/2inch slices of tofu cut into cubes
1 can of diced tomatoes
1 1/2 cups of corn
1 can of black beans
1 cup of cooked rice
1/2 tbs!. cumin
1/2 tbs!. red pepper
2 tbs!. hot sauce (depends on how hot you like it)
3 tbs!. cornstarch mixed with 6tbs!. of cold water(i think its called rue)

put all the ingredients in a pot and cook until all ingredients are cooked and then boil it!. when boiling add rue(this thickens it)!. if you want to make it thinker or not as thick just remember its 2 parts water to one part cornstarch!. reduce heat and serve whenever you want to! Www@FoodAQ@Com

Pumpkin Soup

Ingredients
1 pumpkin (300g)
1000 ml vegetable broth
1 leek
1 carrot
1 celery root
1 onion
1 small green apple (diced)
1 tablespoon oil
1 teaspoon ginger (minced)
1 teaspoon anise seed
1 bay leaf
Salt and pepper to taste

Action
a!. Remove the seeds from the pumpkin and cut it into pieces!.
b!. Cook 10 minutes in the broth!.
c!. Add celery root and bay leaf!.
d!. Stir fry the onion, carrot and leek in oil and last the ginger!.
e!. Put this mixture, anise seeds, and apple dices into the pumpkin and mix well!. Season for 10 minutes!.
f!. Add pepper and salt to taste!.

Potato Soup

Ingredients
5 medium sized potatoes
1 small onion (sliced)
3 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon celery salt
Some parsley (chopped)

Action
a!. Peel and slice the potatoes!.
b!. Cook them in boiling salted water, till soft!.
c!. Put them through the strainer!.
d!. Scald the milk with onion slices!.
e!. Remove the onion, and add milk slowly to the potatoes!.
f!. Melt butter, and stir in flour, salts, and pepper!. Mix well!.
g!. Add to the boiling soup, and cook for 1 minute!.
h!. Strain, sprinkle with parsley and serve!.

Seaweed Tofu

Ingredients
300g tofu (diced)
150g seaweed
1/4 teaspoon salt
1/2 teaspoon ginger (minced)
Spring onion (cut small)
500 ml vegetable soup
1 tablespoon vegetable oil

Action
a!. Place seaweed soak in the warm water, till they are expended, and soft!.
b!. Rinse them thoroughly, and drain the water away!. Cut them small!.
c!. Place tofu in the boiling water for 5 minutes, and drain them!.
d!. Place the oil in a pan, on the stove!.
e!. When the oil is hot, add spring onion, ginger, and stir fried
till fragrant!.
f!. Pour in vegetable soup, and cook till boiling point!.
g!. Add seaweed, cook for 10 minutes, then put in tofu!.
h!. Cook with lid covered, for 30 minutes, till the seaweed are totally cooked!.
i!. Then remove from fire, add salt, and serve!.

Carrot Sweet Soup

Ingredients
1/2 Red carrot (diced)
1 White fungus
300 ml water
Rock sugar to taste

Action
a!. Wash and soak the white fungus in lukewarm water till soft!.
b!. Drain and cut it into small pieces!.
c!. Boil them in a pot of water for about 20 minutes,
until soft!.
d!. Add carrot dices and cook further for another 10 minutes!.
e!. Stir in rock sugar and remove from fire!.
