If you're not familiar with vegan cooking and ingredients, it might be best to stick with the basics!. Buying things like commercial meat substitutes can be tricky for someone who's not used to it, because not all of them are vegan!. I suggest one of the following two recipes:

Tempeh and Mushroom Stroganoff
Courtesy of Whole Foods Market

1 8-oz package wild rice tempeh, cut in strips (You can get tempeh at natural food stores like Whole Foods, and some regular grocery stores are starting to carry it-- look near the tofu)
1 T canola oil
1/2 yellow onion, sliced thin
2 cloves garlic, minced
1 tsp toasted sesame oil
1 large portabello mushroom, sliced
1 T veggie Worcestershire sauce
1 packet vegetarian brown gravy mix
4 oz low fat sour cream (be sure to sub a vegan sour cream product like Tofutti Sour Supreme)
Chopped fresh parsley

Brown tempeh strips in canola oil, turning until both sides are very brown!. Remove tempeh and set aside!. Add onion and garlic to same pan and cook until golden!. Stir in sesame oil, mushroom slices, and Worcestershire sauce and cook until mushrooms are soft!. Add tempeh back to pan!.

In a measuring cup, combine gravy mix with instructed amount of water, then stir into tempeh mixture and heat until thick!. Stir in sour cream and heat just until warm!.

Serve over rice or noodles, garnished with parsley!.

Red, Gold, Black, and Green Chili
Moosewood Restaurant Cooks at Home
Serves 4

? cup bulghur wheat
1 Tbsp Tabasco sauce or ? tsp cayenne
? cup hot water
2 green bell peppers, chopped
3 cups undrained canned tomatoes (28-oz can)
2 cups fresh or frozen cut corn
2 Tbsp olive oil or vegetable oil
1? cups cooked black beans (14-oz can)
3 cups chopped onions
1? cups cooked red kidney beans (14-oz can)
3 cloves garlic, minced or pressed
1 generous tsp ground cumin
1 generous tsp chili powder
salt to taste
Avocado and Cilantro for topping

1!. Place the bulghur, hot water, and about a cup of the juice from the canned tomatoes in a small saucepan!. Cover and bring to a boil on high heat, then lower the heat and simmer gently!.

2!. While the bulghur cooks, heat the oil in a large pan!. Sauté the onions, garlic, cumin, chili powder, and Tabasco or cayenne!. When the onions are soft, stir in the bell peppers and sauté for 2 to 3 minutes more!. Chop the tomatoes right in the can and add them to the pan!. Stir in the corn and beans, and heat thoroughly on low heat!. Taste the bulghur!. When it is cooked but still chewy, add it to the pan with its liquid!. Cover and simmer for a few minutes for the flavors to meld!. Add salt to taste!.

(You don't have to use the bulghur wheat!. You can skip that whole step and just serve the chili over rice instead!.)Www@FoodAQ@Com

Most natural foods stores and Whole Foods have meat analogues, but make sure they're vegan (some have eggs and/or dairy in them)!. Yves and Lightlife both have vegan taco "meat" that you can heat up in a skillet!. Shred some lettuce, dice some tomatoes, dice some onions, whatever other veggies, and you can make your own tacos!.

There are also veggie "meatballs" I've seen in the freezer section of Whole Foods!. Get a jar of Amy's pasta sauce (if vegan, it will indicate it at the ingredients section), heat up some dry pasta, and have pasta and "meatballs!." Toss in a simple salad, and you've got a great meal!. Newman's Own and Whole Foods store brand also have vegan varieties, but read the ingredients carefully!.

You can also make chili with tempeh instead of meat!. Even conventional grocery stores carry tempeh, but most of them carry it in the produce section!. Whole Foods and Trader Joe's carry it in the refrigerator section!. Crumble the tempeh into the chili when cooking!. Get some plain tortilla chips, frozen fries to heat up, or potatoes to bake, and pour the chili over that!.

There are tons of options, many of them simple to prepare for someone who's not used to vegan cooking!.

Your friend will enjoy the wholesome goodness of a carrot raisin salad:

Carrot raisin Salad
Mix well
1 # wholesome carrots shredded
1/3 C vegan mayonnaise
2 T sugar
? t salt
2 T wine (optional)
Chill
Before serving mix in:
? c raisins

This one is great with bacos, sunflower seeds and broccoli added too! Add more mayo to moisten!.
