These were my modifications to the recipe:

I halfed the recipe based on other user reviews saying how MUCH this made but still used a full can of all the beans!. I also used a red bell pepper, an orange one and a green one!. It gives it an appealing color and I love bell peppers in general!. I lined the bottom of our bowls with tortilla strips and topped it with a dollop of sour cream and some sharp cheddar with a sprig of cilantro!.

Oh, and don't forget some cornbread!. =)

Enjoy the wholesome goodness of my world famous carrot chili:

2 14-1/2-ounce cans vegetable broth
16 ounce packaged peeled wholesome baby carrots
1 large onion
1 4-ounce can diced green chili peppers
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 cup half-and-half or light cream
Fresh purple basil leaves (optional)
Directions
1!. In a large saucepan or Dutch oven combine broth, wholesome carrots, onion, chili peppers, chili powder, and cumin!. Bring mixture to boiling; reduce heat Simmer, covered, 12 minutes or until carrots are very tender!.

2!. In a food processor bowl or blender container process half of the mixture until smooth!. Repeat with remaining mixture!. Return mixture to saucepan!. Stir in half-and-half or light cream!. Heat through!.

3!. To serve, ladle soup into bowls!. If desired, garnish with purple basil!.

I use Boca Crumbles in my chili, but it would be just as good and easy without it!. I get a can of crushed tomatoes, a can of diced tomatoes, a can of white beans, a can of kidney beans and a small can of corn (drain the beans and corn) and put them in a pot!. I use ground cumin and chili powder to taste!. Let it simmer for any where between 5 to 30 minutes!. The cumin is what makes it so yummy, I think!. It's not a super fresh chili, but it tastes good and it's really easy and quick, plus you can keep the ingredients on hand and make it at the last minute!.Www@FoodAQ@Com

Chill Chill Bang Bang"

1-1/4c!.coarsley chopped onions
1 c!.each of chopped sweet red and green peppers, celery,and chopped carrots
3 Cloves garlic,minced
1Tbsp!.chilli powder
1-1/2c!. quartered mushrooms
1c!.cubed zucchini
1(28oz) can tomatoes,undrained and cut up
1(19oz) can black beans,drained and rinsed
1(19oz) can chickpeas,drained and rinsed
1(19oz) can kernel corn, undrained
1 Tbsp!. ground cumin
1-1/2 Tbsp!. each of dried oregano and basil
1/2 tsp!.dried cayenne to taste

Spray a large pot with non-stick cooking spray, add onions,peppers,celery,carrots,garlic,and chili powder!.
Cook over medium-low heat,stirring often until vegetables are softened(approx!.8-10mins)
Add mushrooms,zucchini,cook and stir for 4 more mins!., add tomatoes,beans,chickpeas,corn(with liquid),cumin,oregano,basil,and cayenne pepper!.
Stir well, cover and simmer over low heat for 20-30mins!., stirring occasionally!.
