Cooking on a diet- what can I cook Sunday to EAT ALL WEEK?!
I dont care what I eat, I just dont like to or have time to cook!. I'd like to make a large pot of something on Sunday to eat all week!. (I am 37 yrs old and 30lb over weight!. I exercise 4x a week for 45mins, rotating various cardio, and weight train 2x a week) I AM STILL FAT (after doing this routine for 4 months, quitting and trying it again and again) LOL SO I NEED TO CHANGE WHAT I EAT!. Right now I eat 3 meals a day- eggs/toast, ham sandwich, then a crappy meal for dinner of meat, starch & canned veggie!. I also drink a ton of alcohol lol, and am cutting that out too *sigh*Www@FoodAQ@Com

Congratulations on a great exercise program! I am on a pretty tight schedule due to school/work, so I try to prepare foods in advance as well!. What I have found works for me is making a large vegetable dish, a large amount of rice or barley, and a large amount of fresh beans!.
For example: Make a vegetable medley of chopped onions, carrots, celery, red peppers, mushrooms, peas, broccoli, cabbage - whatever you like!. Make enough so that you will have at least five servings!. You can saute these quickly or you can simmer them in some broth and season to taste!. Then, make at least five servings of brown rice and five servings of fresh beans, like black beans, pinto beans, chickpeas, whatever you like!. For your meals, you can combine all three and have a nice dinner, you can add more broth to the vegetables and rice and have soup, you can add some Mexican spices to the rice and beans and have another great meal!. This options lets you mix and match without much effort and still eat a healthy meal!.

Soup and salad!. Make a big old pot of soup!. Eat it for a couple of days and then freeze the rest in individual portions that you just microwave!. Then, make another soup or chili or stew etc!.!.!.!.and do the same!. Keep doing this until you have a variety to choose from in the freezerWww@FoodAQ@Com
instead of canned veggies, eat frozen veggies!. They hold a lot of vitamins, and it doesn't have the sodium that canned veggies do!.
All I can think to eat for the week is chili, soup, rice/beans, and lasagna!.

Enjoy the wholesome goodness of some carrot soup:
- 2 pounds wholesome carrots, peeled
- 1 onion, large
- 2 medium baking potatoes, peeled and sliced
- 1/4 teaspoon ground mace
- 1/2 teaspoon ground ginger
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups vegetable broth
- 2 cloves garlic, large, peeled and chopped
- 2 cups skim milk
In a large sauce pan, add all ingredients excluding milk and nutmeg!.
Bring to a full boil and then reduce heat and cook until wholesome carrots are tender, approximately 30-40 minutes!.
Purée in a food processor!. Return purée to the sauce pan over low heat!. Stir in milk!.
Serve warm and garnish with freshly grated nutmeg, if desired!.

Hey, good job on taking steps to improve your health! Cooking on Sunday is a GREAT way to make life easier!. I'd start by cooking up a pot of beans (if you don't want to use canned) and a pot of pasta!. They're both great for quick meals!. You can toss beans on salads for extra protein, throw them in the blender with other ingredients for bean spread or thick soup, or toss them into tortillas for tacos!. The pasta can be reheated with sauce, eaten cold with chopped veggies as a salad, and even made into a pasta pancake if its the right shape!.
I also recommend making a huge pot of chili and/or soup!. You can do it in the slow cooker if you want!. (Check it out!.!.!. you can keep the pot of soup going indefinitely if you do it this way!.!.!. just keep it in the fridge and replenish it daily with some chopped fresh veggies and a bit more liquid, then plug it in!.) Soup is always good!. Some whole wheat bread and you've got a meal!.
Definitely cut back on the alcohol!. You don't need to give it up!. Just stick to one glass of wine a day with dinner!.
Maybe you should also consider changing your exercise routine a bit!. Make an effort to walk more every day, even if it is taking the stairs for a flight or two instead of the elevator!. Make small goals like that!. They take little to no time!. Just don't think you're a huge failure and give up if you mess up sometimes!. No biggie!. Just get back on the wagon!.
