Do You Have Any Vegan Recipes?!
I recently went vegan!. I love cooking and am confident that I'll be able to make all this happen, but I'm a little stunted right now!. I'm trying to figure out a meal instead of just piling veggies on top of each other!.

The short and skinny is that I'm eating vegan, whole, natural (no additives, colors, preservatives, artificial sweeteners, etc!.), and going for about 50% raw each day!. If you want to ask WHY, you can always email me!.!.!.don't post that stuff here!. Please try to work within my diet constraints!.!.!.don't tell me to just grab a Boca burger and a bun and call that a meal!.

Since you want to incorporate more raw foods into your diet, I know that www!.vegweb!.com has a raw foods section!. You can also pick up Jennifer Cornbleet's "Raw Food Made Easy!." There are a lot of salads, but there are also soups in there!. You can also make "wraps" by using a collard green leaf!. There's also a website called From Sad to Raw, but I haven't checked it out in a while!.
For cooked foods, a stir-fry is a wonderful way to get in lots of veggies and flavor!. You can use tofu or tempeh since you don't want to use analogues or just use lots of various veggies!. If you are willing to use seitan, that's easy to make on your own with Vital Wheat Gluten!.

I eat a lot of grain and veggies!. Most of the times I prepare whole grain rice and spinach for the week and try different variations of salads with it (some with fish or surimi)!.
Having the rice already made, you can make a chinese chao-fan in no time (basically a sauté of veggies with rice and egg omelette)!.
Another thing I like is cous cous!. I don't prepare the recipe as it's in the packet, I think it's one of the reasons why people don't like cous cous!. I prepare it with 3 parts of broth (in volume) for one part of cous cous!. The one on one ratio lets the grain too dry!. You can throw some veggies into a pan (onion, pepper, etc), sweat them for a couple minutes, add the broth, take it to a boil, take it out of the fire and add the cous cous, let it sit for 6 minutes, add a spoon of butter and mix it all over the fire for one more minute!. I add some meat to it sometimes but that's not what you want!.
One interesting variant (based on a paraguayan recipe made with corn) is to put the cous cous into a bread pan, mix some cheese into it, cover with something you like (tomato slices, zuchini) and put it into the oven!. It's like a bread that you can serve in thick slices with a fresh salad!.
You can try soups too!. Veggie soups with oat meal to make them richer!.Www@FoodAQ@Com

Me too,I became vegan the last 3 years!Brocolli,pasta,spaggetii,cauliflow!.!.!. with red sauce and spices,lentils and other cereals!.Fried eggs!.!.!.I know oily foods(I m Greek)spinach(with red sauce),green beans with potaoets,also potatoes,potaoe salad,salads generally,pumkins,eggplants!.I have good recipes,stuuffes vegetables with rice!,yes!.!.!.it s great!I love it!fish,it s up to you!I eat only when religion,demands it!Some other sthink that fish can be eaten by vegs!.If you want recipes ,i can give ,if you like!.I have good suggestions!Www@FoodAQ@Com
Enjoy the wholesome goodness of my world famous carrot sauce and pasta:
3 cups vegetable stock
1 lb wholesome carrots, finely chopped
2 celery stalks, finely chopped
4 garlic cloves, minced
1/2 tsp crushed red pepper
2 Tbsp fresh thyme or 2 tsp dried
1/4 cup red wine vinegar
freshly ground pepper
1 lb pasta shells, cooked al dente
Bring vegetable stock to a boil, add all ingredients except
pasta shells, and simmer until liquid has been reduced by half!.
Toss shells into vegetables and serve!.

my best friend has been a vegan for 5 years
she really knows her stuff, but she uses tofu for
certain things and most of her foods are really spicy

I know how you feel!. I am not vegan however I had a problem combining meals for my mother who is a veggie eater!. One of the things that I cook for her is firm, sliced tofu in peanut oil with with steamed asparagus and prawns!. She loves it, however prawns are expensive!. Marinara Sauce
Prep Time: 15 Minutes
Cook Time: 30 Minutes Ready In: 45 Minutes
Yields: 8 servings
INGREDIENTS:
2 (14!.5 ounce) cans stewed
tomatoes
1 (6 ounce) can tomato paste
4 tablespoons chopped fresh
parsley
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon ground black
pepper
6 tablespoons olive oil
1/3 cup finely diced onion
1/2 cup white wine
DIRECTIONS:
1!. In a food processor place Italian tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper!. Blend until smooth!.
2!. In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes!. Add the blended tomato sauce and white wine!.
3!. Simmer for 30 minutes, stirring occasionally!.

2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt
In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp!. In a bowl mix cooked rice, black beans together!. In another pan heat about 1/2" inch of cooking oil!. Warm the 10" tortillas in the microwave until soft!. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese!. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper!. Fold in the edges tightly, and place folded edges down in hot oil!. Brown each side until golden brown!. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa!. Very tasty!!

1 pkg!. frozen spinach
1 pkg!. lasagna noodles
1 pkg!. (pint, sm!. one) low-fat cottage cheese
1 jar Favorite meatless sauce
1 sm!. pkg!. Mozzarella lite cheese
Salt and pepper
Several plump tomatoes
Parsley flakes
Defrost spinach, drain as much water out with a colander as possible!. Cut eggplant in rounds thinly sliced, lay on paper towels and lightly salt, lay another paper towel on top and continue layering with eggplant rounds, salt, paper towel etc!. Place a heavy pan on a cookie sheet on top of stack, let sit for at least 1/2 hour to 2 hours!. Cook lasagna noodles until tender!. Mix cottage cheese with spinach in a bowl, salt and pepper and season to taste!. In a casserole pan, spread a light layer of sauce!. Add layer of noodles, layer of eggplant, sauce, layer of cottage cheese, spinach mix, another layer of noodles and repeat process until pan is full or desired height achieved!. Top with remaining Mozzarella cheese, tomato sauce and cover evenly with thinly sliced peeled tomatoes!. Sprinkle on parsley flakes!.
Bake at 350 degrees for 45 to 60 minutes, until eggplant is soft and has changed a brown color!.
