You don't even need a mix!. Steamed seitan sausages are simple to make from scratch and can be frozen in big batches!. Here is a recipe for chipotle sausages inspired by Field Roast brand (which are super expensive, but not hard to duplicate): http://www!.postpunkkitchen!.com/forum/vie!.!.!.
At the end of that post, there is a link to another thread discussing the steaming method and (I think) giving the recipe for apple-sage sausages!. In turn, the second thread has a link to a blog where you'll find a recipe for steamed Italian sausages, which inspired the steaming method for the chipotle and apple-sage recipes!. You can then sub out any seasoning combinations you like as long as you keep the wet/dry ratio intact!.
(BTW, http://www!.theppk!.com has tons and tons of good recipes and vegan cooking tips!. There are some really creative and inspired cooks there!.)Www@FoodAQ@Com

Yves makes mock sausages and sausage patties and they're great!. also try Tofurkey sausages!. I sometimes throw them in my food processor to grind it up and then make stuffed peppers or to put in casseroles!.Www@FoodAQ@Com
I would go with pre-made or ones like Boca or Morning Star!. I've tried to make my own haven't been able to figure out the right spices to add!. Www@FoodAQ@Com
no such thing, all processed foods have animal product or biproduct in them!.
