What's a great, fairly simple dish I can take to a vegetarian potluck?!


Question: What's a great, fairly simple dish I can take to a vegetarian potluck!?
I say simple not because I need EZ ideas, but because I prefer foods that have relatively few ingredients!. But I also want it to be yummy and impressive (not common) so if you have an idea, it's okay to err on the side of fancy!. :) Thank you!Www@FoodAQ@Com


Answers:
Red onion, pepper and goats cheese tart with pesto sauce!.

Cut a ready rolled sheet of puff pastry into saucer size circles or squares!. Draw a line about one and half centimetre around the inside of the pastry and prick the centre area several times with a fork!.

Gentle sweat out finely sliced (not diced) onions with the finely sliced (not diced) peppers!. Spread a layer of bought pesto sauce into the centre of the pastry and then place on the cooled peppers and onions!. Finaly add a pice of goats cheese in the centre!. Glaze the edge of the pastry with milk or an egg wash, place on a greased baking tray and put in a pre-heated oven at 180 degrees for 15 to 20 mins!. Take it out when the pastry is golden brown!. Serve alone or with a simple salad of pea shoots in a mild oil/balsamic/lemon dressing!.Www@FoodAQ@Com

What I actually did one year was make a vegetarian gumbo without all of the meat unless you don't like that idea!. Lasagna is also great, but can be a little expensive sometimes!. I have two more really good vegetarian recipes that I've seem to be giving everyone else today, so I'll give it to you as well ^_^ My vegetarian chili, and eggplant Parmesan!. They're both great, and you can choose between them!. GOOD LUCK!! and have fun at your Potluck!! Here's the recipe for the gumbo anyway!. Hope you like it!

Vegetarian Gumbo:

Ingredients:

2 pounds collard greens, stems removed and chopped
2 cups water
1/4 cup vegetable oil + 2 tbsp
1/4 cup flour
2 onions, diced
1 green bell pepper, diced
4 stalks celery, chopped
3 or 4 tomatoes, chopped
1/4 cup hot sauce
1 tsp file powder
1/4 tsp cayenne pepper (or to taste)
1/2 tsp thyme
1/2 tsp oregano
1/4 cup fresh parsley, chopped
3 cloves garlic, minced
6 cups vegetable broth
2 bay leaves
1 1/2 cups chopped okra
1 16 ounce can kidney beans
salt and pepper to taste
1 1/2 cups rice, pre-cooked
Preparation:

In a large soup pot, boil the greens in two cups water for about ten minutes!. Cover and allow to steam for 5 to 10 more minutes!. Reserve the cooking water!.
In a separate small pot, whisk together the 1/4 cup oil and flour over low heat to form a roux, stirring continuously for about 10 to 15 minutes!. Once it turns a dark reddish brown, remove from the heat and set aside!.

In a large soup or stock pot, sautee the onions, bell pepper, celery and tomatoes for a few minutes in the 2 tablespoons of oil, until just soft!. Reduce the heat and add the hot sauce, file powder, cayenne, thyme, oregano, parsley and garlic and cook, stirring for one or two more minutes!.

Add the four and oil roux and the vegetable broth and stir well to combine!. Add the cooking water from the collard greens and the bay leaves!. Bring to a simmer, and allow to cook for 15 minutes!.

Add the collard greens, okra, kidney beans, and rice and cook for 5 more minutes!. Remove bay leaves before serving!.Www@FoodAQ@Com

I made a simple dish last night that I think is pretty good!. I got the recipe from "Vegan A Go Go" by Sarah Kramer: I modified the recipe by adding cayenne pepper, garlic, and vegan Italian sausage, but you can leave those out if you want!.

Wendy's Red Lentil and Brown Rice Casserole:

3/4 cup dry red lentils (don't use green or brown), rinsed
3/4 cup dry brown rice
1 14 oz!. can crushed tomatoes
3 cups vegetable stock
1 medium onion, chopped
4 cloves garlic, minced (optional)
1 tsp!. dried basil
1 tsp!. dried oregano
1/2 tsp!. cayenne (optional)
2 vegetarian "italian sausage" links (optional)
1/2 tsp!. salt
a few pinches ground black pepper
1 cup grated vegan or regular cheese (optional)

Preheat oven to 350F!. In a casserole dish combine all ingredients except cheese, if using!. Cover and bake in the oven for 1-1/2 hours, stirring every 30 minutes!. Uncover, sprinkle cheese on top and broil for a couple minutes to melt it, making sure not to burn it!. Enjoy!.Www@FoodAQ@Com

I was at a Christmas party a few years ago and one of the girls brought in a green bean salad!. It was very simple!. She used cut up, cooked green beans, slivered almonds and pomegranate seeds!. The salad was served cold and was very good!.Www@FoodAQ@Com

Get a package of Dirty Rice, add pinto or red beans from the can and then cube (small cube) up some firm tofu and brown it in a skillet and add it all together! Www@FoodAQ@Com

Ok I'm a vegetarian but I'm also lazy so I'm a big fan of pasta casseroles!. I know it's not particularly veggie-filled which is what everyone expects from me as a vegetarian, and I guess if you liked veggies messing up your marinara you could add whatever you liked!. Actually, spinach would be good in this!. It's basically the lazy version of lasagna/manicotti/stuffed shells!.

1 pound whole wheat pasta (rotini or penne or elbows, something midsize)
1 jar pasta sauce (like Ragu parmesan & romano, mmm)

Cook pasta al dente (don't overcook) and combine with sauce, set aside!.

12 oz (3 cups) mozzarella cheese, shredded
1/2 cup ricotta
1/4 cup parmesan (optional)
1 egg, beaten
1 tablespoon dried basil or 1/2 tablespoon Italian seasoning (to taste)
1/2 teaspoon black pepper
any extras like chopped veggies or spinach

Combine all remaining ingredients in a bowl, reserving 1 cup of mozz cheese for topping!. Layer half the pasta in a 13 x 9 cake pan!. Spread cheese mixture over pasta as middle layer (I actually found using my hands works best for this if the mixture is semi-moldable - I squish flat and lay it over the pasta)!. Spread remaining pasta over cheese mixture, cover with foil, and bake at 375o for about 20 minutes!. Remove foil, add remaining mozzarella, and bake uncovered 10-15 minutes until cheese is melted and looks delicious!.

Ok so it's loaded with cheese which isn't great if it's a vegan potluck, and it's semi-common except not usually done exactly that way!. If you want something vegan, try a Shepherdess Pie!. http://community!.livejournal!.com/veganco!.!.!. or my sister's awesome:

Lentil Soup (more of a stew as it's supposed to be rather thick)

1 onion, chopped
2 cloves garlic, minced
2-3 carrots, chopped
2 stalks celery, chopped
1 lb!. lentils, sorted and rinsed
water or stock
1/2 box (frozen) spinach or kale
1 large can (28 oz) crushed tomatoes, seasoned (or add your own tablespoon or so of basil/italian seasoning)

Saute onion, garlic, veggies, til onions are transluscent!. Add lentils and cover with water or stock, maybe an inch or so extra liquid above lentils!. Bring to a boil and then simmer on low heat for at least a half hour until lentils are tender, adding more liquid if needed!. Once lentils are cooked, add tomatoes and spinach and heat through!. Serve to taste with salt and pepper!.

I wish I was asked to bring "real" food to get-togethers because I'm a main dish gal but because I'm a vegetarian I'm always asked to bring a salad (I don't even eat salad and how many different kinds of green salad can one party have!?) or a "vegetable side dish" with the exception that, "someone else is making green bean casserole!." lol!.!.!.
