Ener-G is a great egg substitute, and it's found in most health food stores and some larger grocery stores!. You can also mash up or blend about a half a banana or 1/4 cup applesauce or pureed fruit to use as an egg substitute!. Tofu (2 oz) is a really great substitute for eggs when you're making dishes like quiches, fritattas, etc!. I personally like Soyslender soy milk the best, because it's really low sugar and tastes amazing! And it comes in cappuccino, chocolate, and vanilla (if not more) flavors, so you have some options! It's usually in the baking section, not were the normal milk/soy milk is!. If you just want refrigerated soy milk, I would try Silk vanilla or 8th Continent vanilla soy milk!. You can try regular, but it's a little bland unless you're using it for baking or cooking!. If you want to just drink the soy milk or put it in cereal then I would get flavored!.

I thought you wanted this for like a cake recipe so here is my original answer:
look by the non refridgerator health food section or by powder milks!. Vitasoy makes a vanilla soy milk that does not have to be refridgerated and comes in a small bottle almost like a nesquick and is fairly cheap!.
For eggs use 1/2 of a large banana per egg - mashed up!.

But just for going vegan try vitasoy milk anyway!. I love it!! I have 2 small bottles of chocolate (b/c my store doesnt sell the bigger boxes) and a vanilla box in my fridge -i like them to be cold- Tastes soo good!. And also 8th continent chocolate milk was fairly good!. Not as good as vitasoy but not bad!.
also try if soy's not your thing, rice milk, oat milk, almond milk, or hemp milk!.Www@FoodAQ@Com
