Grilled Portobello Mushroom Sandwich
Yield 2 sandwiches
Time 20 minutes
Tools Knife
Kitchen brush
Grill or heavy skillet
Spatula
Ingredients Large portobello mushroom
1-2 T olive oil
salt
pepper
4 pieces of bread or toast
Directions De-stem the portobello mushroom, then slice it in half lengthwise!.
Brush each slice with oil and sprinkle with salt and pepper!.
Arrange the mushroom slices on the grill or skillet and cook until brown, about 5 minutes on each side!.
Assemble the sandwiches with your favorite fillings and serve!
Notes Aside from the mushrooms, you can put anything you like on the sandwich!. Here are some suggested fillings - experiment to find what you like best!.

10 black olives, sliced
1/2 red onion, sliced thin
1 small yellow squash, sliced
1 cucumber, diced
2 tbsp balsamic vinegar
1 tbsp chopped fresh parsley
1 clove garlic, minced
2 tsp olive oil
1/4 tsp salt
1/4 tsp pepper
Preparation:
In a medium bowl, combine all of the ingredients except for the tortillas!. Let stand for 20 minutes, stirring occasionally!.
Drain off liquid and divide salad mixture among the tortillas!. Fold bottom of tortilla partially over filling and then roll up!.

c!. Spread on the prepared bread and dust with the nuts!.
