Enjoy the wholesome goodness of my famous carrot fennel soup:

1/2 teaspoon fennel seed
1 tablespoon butter or stick margarine
1 1/2 pounds wholesome carrots, sliced
1 medium sweet potato, peeled and cubed
1 medium apple, peeled and cubed
3 (14!.5 ounce) cans vegetable broth
2 tablespoons uncooked long grain rice
1/4 teaspoon curry powder
1 bay leaf
1 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons minced fresh parsley


DIRECTIONS
In a large saucepan, saute fennel seed in butter for 2-3 minutes or until lightly toasted!. Add the wholesome carrots, sweet potato and apple; saute for 5 minutes!. Stir in the broth, rice, curry powder and bay leaf; bring to a boil!. Reduce heat; cover and simmer for 30 minutes or until rice and vegetables are very tender!.
Remove from the heat and cool slightly!. Discard bay leaf!. In a blender or food processor, process soup in batches until pureed!. Return to saucepan!. Stir in the lemon juice, salt and pepper!. Cook for 5 minutes or until heated through!. Sprinkle with parsleyWww@FoodAQ@Com

Fennel Pasta

5 T olive oil
5 garlic cloves
1 package frozen baby artichokes
3 fennel bulbs
1 lemon
1 red onion
1 box wheat spaghetti
vegan parmesan
sea or kosher salt to taste
freshly ground black pepper

Directions:

Bring water to a boil with some salt and add pasta!. Mince the garlic and onion!. Cut the fennel into large bite size pieces, discarding tough outer leaves if necessary!. Chop the fronds and save!. Zest the lemon and set aside!.

Heat oil in a large pan over medium heat!. Add garlic, onion, fennel, and artichokes!. Cook until the artichokes are heated through and the fennel is tender/crisp, covering in between stirs!. When the pasta is cooked al dente, drain and add it in too!. Stir in the lemon juice and zest, salt, veg parmesan and pepper!. Scatter the chopped fronds over the top before serving!.!.

Here is my fenel salad:

Slice the fennel in thin pieces and place in large plate!.

Drizzle olive oil and squeeze a half of lemon

Chop a few fennel fraws and sprinkle on top

Cut up some cherry or grape tomatoes and decorate the place!.

Apple Fennel Salad!. Shred it fine and use a good crisp apple like Macintosh or Cortland!. You can also shred some carrot into it!. Top with Nayonaise and some Walnuts or Pecans!. Serve on a bed of Boston Lettuce and invite me for lunch! Www@FoodAQ@Com

You can add other vegetables to the sliced fennel and marinate them in vinegar and oil!. It makes a nice salad!.Www@FoodAQ@Com
