Hi hon! I always cook this for my vegan friends, and they really enjoy it - it's so simple and tasty too! VEGETABLE GOULASH!.!.!. Here goes:
2 tablespoons of olive oil
2 medium onions (sliced)
1 rounded tablespoon of wholemeal flour
1 heaped tablespoon of paprika
a couple of pinches of cayenne pepper
400g tin of chopped tomatoes
10 fl oz of hot water, with a teaspoon of tomato puree stirred through it
half a medium cauliflower head (broken into florets)
8 oz of carrots (chopped in chunks)
8 oz of courgettes (chopped in chunks)
8 oz baby new potatoes (cut in halves)
half a green pepper (deseeded and chopped)
Salt and pepper to taste!.
Begin by heating your oven to gas mark 4 (350F/180C)!. Heat the olive oil in a large flameproof casserole dish!. Fry the onion until softened then stir in the flour, most of the paprika and the cayenne pepper!. Cook for about a minute, and then add the chopped tomatoes, and the tomato puree water!. Bring the sauce up to boiling point while stirring to keep it smooth, then add all the vegetables!. Season with salt and pepper and then transfer the casserole to the oven and bake for 40/45 minutes!. Serve with brown rice or noodles and enjoy! :o) xxx Hope this helps!. xxxxxx
p!.s!. If you were doing this for your Vegetarian (as opposed to Vegan) friends, you could stir in some sour cream or natural yogurt before serving! :o) xxxxxxxxWww@FoodAQ@Com

I generally enjoy making Stratas whcih are pretty much like a layered veggie cassorole!.
Pick up some Polenta, Eggplant, Zucchini, Onion, Garlic and your favorite tomato sauce (a soy based ricotta is optional)!.
Slice the eggplant, polenta and zucchini into small rounds!. Layer in an over safe cassorole dish!. after every layer of veggies slather on some tomato sauce, with diced onion and garlic (and a vegan cheese if desired however most are soy based)!. Repeat until you are happy with the size of the dish!.
Baked in an oven at 350 degrees for about one hour until eggplant is tender!.
Let stand for about 10 minutes and serve!.Www@FoodAQ@Com
