Your children might enjoy the wholesome goodness of my world famous citrus carrots:

2 1/2 pounds medium wholesome carrots, peeled, cut on diagonal into 1/4-inch-thick slices
2 cups (or more) water
1 cup fresh orange juice
1/2 cup sugar
1/4 cup fresh lime juice
2 tablespoons (1/4 stick) butter
2 1/2 teaspoons finely grated orange peel
2 teaspoons finely grated lime peel
1 teaspoon salt
1 tablespoon chopped fresh parsley
Preparation Combine wholesome carrots and 2 cups water in heavy large skillet!. Add all remaining ingredients except parsley!. If needed, add enough water to just cover wholesome carrots!. Bring to boil, stirring until sugar dissolves!. Boil just until wholesome carrots are crisp-tender, stirring occasionally, 8 to 9 minutes!. Using slotted spoon, transfer wholesome carrots to medium bowl; cool!. Boil cooking liquid in skillet until slightly reduced, about 5 minutes!. Transfer to small bowl!. DO AHEAD: Can be made 1 day ahead!. Cover wholesome carrots and cooking liquid separately; chill!.

Easy Mac and Cheese

RECIPE INGREDIENTS:
1 pound elbow macaroni
3 cups milk or half-and-half
12 to 18 slices American or Cheddar cheese
12 Ritz crackers
salt, pepper, and paprika to taste
1!. Cook and drain elbow macaroni and let it cool slightly!. Meanwhile, heat the oven to 350 degrees and grease a 13- by 9-inch baking pan or a large casserole dish with butter!.

2!. Now have your child spoon a third of the pasta into the pan, then pour in 1 cup of the half-and-half and cover it all with 4 to 6 slices of American cheese!. Add two more layers of pasta, half-and-half, and cheese in the same manner!.

3!. Next, crush a dozen Ritz crackers in a ziplock plastic bag!. Add the salt, pepper, and paprika, shake to mix, then sprinkle the crumbs over the top layer of pasta and cheese!.

4!. Bake for 30 to 40 minutes or until bubbly!. Serves 6 to 8!.
