Yes there are many vegans with restricted diets due to celiac disease and sensitivity to wheat!. You can use Quinoa which has all the amino acids -- and is gluten free, also rice!. Both of them have been made into gluten free pasta products!. The health food stores are now packed with products for the gluten free - wheat free population!. also there is a wonderful magazine you may find very helpful called Living Without which has been published for those with food allergies!. I think it would be really difficult for a vegan to have a gluten-free diet, although I'm sure it could be done!. Remember that the key to a healthy diet, no matter what kind, is variety!. If you were to cut out animal products AND gluten AND carbs you might find you've restricted too much to be healthy!.Www@FoodAQ@Com
