If you're eating a healthy vegan diet and have a somewhat active lifestyle, you really shouldn't feel you have to worry about cutting carbs, which are necessary to a healthy diet!. Just make smart decisions about everything you eat, choosing whole grains whenever possible!.
It's really easy to go overboard with soy, so my favourite source of protein is black beans!. They are also a great source of fibre, antioxidants and folate!. A meal of black beans, spinach, tomatoes, avocado and brown rice is SO healthy and contains mostly monounsaturated fats (which are necessary for good health)!. The fibre in the black beans and brown rice helps lower the glycemic index, so the carbs metabolize slowly, keeping your blood sugar regulated and you feeling fuller longer!. There is also protein in the spinach and rice!.Www@FoodAQ@Com

One way to get your protein is via a protein shake!. I use a soy protein shake with no sweetener called SUPER GREEN PRO 96 Soy Protein, from Nature's Life (you can find it on-line at Vitaminshoppe!.com or other places -- I think Vitaminshoppe!.com usually has the best prices on-line, but I have yet to see it in the stores!. This product is also carried in Whole Foods -- as of my last visit, at least) This product also contains fiber, chlorella, vitamins, and vegetarian digestive enzymes!. It is vegan!.
Hard-line raw vegans hold that you can get all of your protein from vegetable sources!. I believe that you need to include good amounts of raw nuts and seeds (either whole/soaked, or sprouted) to achieve a reasonable amount of dietary protein!.
Alfalfa sprouts may be the highest source of vegan protein!. Other raw sprouts also contain high amounts of protein!. Cooking can interfere with the assimilation of protein, so it is best to consume sprouts raw!.
