Question: What high protein, vegetarian dish can I make for a meat loving friend!?
I am making my friend dinner because she is trying unsuccessfully to lose weight and eat healthier!. Her dietitian says she needs lots of protein and more fatty acids!. She loves pasta, not big on salads, and I don't want to make her something too "healthy/weird" that would scare her!. Any suggestions would be soooo appreciated!! Www@FoodAQ@Com

As a vegetarian with meat loving kids I find one dish that is accepted every time is a simple vegetable lasagna!. You can use either small amounts of TVP or Lentils (tinned are quick and easy) or forget them altogether and just use heaps of very finely chopped vegetables in a rich tomatoe sauce!. With a basic bechemal sauce and ready to eat pasta sheets (dried work just as well), put together, bake and forget!. Serve up with crusty garlic bread, some nice wine and a selection of vegetables or salad!. Who can resist!.

INGREDIENTS:
2 tablespoons extra virgin olive oil
1/8 cup balsamic vinegar
2 sprigs fresh rosemary (about 2 tablespoons), leaves stripped and chopped

1 lemon, juiced
4 large portobello mushroom caps
2 teaspoons grill seasoning, such as McCormick brand Montreal Steak Seasoning or 1 teaspoon combined coarse salt and pepper
1/2 pound fresh smoked mozzarella, sliced
Roasted Pepper Paste:

1 jar roasted peppers (14 ounces), drained
A drizzle of extra virgin olive oil

A handful of flat leaf parsley leaves
1 large clove garlic, cracked away from skin
Salt and pepper
4 large crusty rolls, split
Suggested toppings:

Whole baby spinach leaves
Thinly sliced red onions

PREPERATION:
Combine first four ingredients in the bottom of a large sealable plastic bag!. Add mushroom caps, seal bag and shake bag to coat caps, then let the mushrooms marinate for 15 minutes!.

Grill mushrooms on an indoor electric grill, starting with caps down, turning to caps up, 6 minutes on each side!. You can also pan fry in large nonstick skillet for the same amount of time!. As they cook, season caps on each side with grill seasoning or a little salt and pepper!. Melt the smoked cheese over mushroom caps in the last minute of grill time!.

To make the pepper paste, combine the roasted peppers, olive oil, parsley, garlic, salt and pepper in food processor and pulse grind into a thick sauce!.

To serve, place the grilled mushroom caps topped with melted cheese on the bun bottoms!. Top with spinach and onion!. Spread bun tops with roasted pepper paste!.

SERVE WITH A SIDE OF WHOLE GRAIN PASTA THAT HAS BEEN BOILED IN VEGGIE BROTH WITH SLICED LEMONS ADDED TO THE BROTH!. MAKE SURE TO USE A LOW SODIUM BROTH BUT NOT A BROTH THAT IS TOTALLY VOID OF SALT!. SPRINKLE WITH OLIVE OIL AND FRESHLY GRATED CHEESE!. GARNISH WITH FRESH HERBS AND TOMATOES IF YOU LIKE!.Www@FoodAQ@Com

You should make her soy!. i don't mean this in a dumb way but actually for health reasons!.
don't tell her its soy!. say its some new meat which has a lowerfat content!. see if she can tell the difference between the real thing and soy!.
either way soy is healthy!. very healthy!.
rich protein!. low fat!. everything!.
cut carbs, so if your making her a soy burger or something, then the burger bun should be some whole meal or something!.
its not healthy/wierd sounding at all!. its a burger!. start her off on that and you can do the un-yummy salad stuff once in a while too!.

pasta is good!. you can make that too, but considering shes trying to loose weight pasta (carbs) isn't the best thing!.

Pasta "primavera" (asparagus, carrot slivers) with tofu balls (freeze tofu, thaw!. Drain and mix with fried onions, fried bits of carrots, fried bits of pepper -- and I mean little bits -- and your favorite seasonings!. You'll probably need to bind it with an egg, unless you know some vegan secrets!. Roll in cornstarch, and either bake or fry!.)!.
