***You can test for pectin in your FRUIT!
There is a test that uses rubbing alcohol to provide a rough indication of the amount of pectin in the fruit!. Mix 1 teaspoon of cooked, cooled crushed fruit with 1 tablespoon of rubbing alcohol!. Use a closed container and shake gently!. Juices from fruit that is high in pectin will form a solid gelatinous lump!. If the fruit is low in pectin, it will form only small rubbery particles!. Those wish an average pectin content will form a few pieces of the jelly-like substance!.

Pectin in Fruits:Citrus skins (oranges, tangerines, grapefruit, lemons, limes, etc!. - the pectin is high in the skin but low in the fruit), tart cooking apples, crab apples, lemons, wild grapes (Eastern Concord variety), cranberries, gooseberries, boysenberries, sour Apples, Blackberries, Currants, Gooseberries, Loganberries, most Plums (not the Italian kind), and Quinces are high in pectin!.

Apple, grapefruit, orange and apricot are known to have high levels of pectin!. Generally, 60 - 70 percent of the dietary fiber in citrus fruits is pectin!. Other sources of pectin include banana, beets, cabbage, carrots etc!.

Apples and crab apples!. Their is also pectin in other fruits but not to the extent of apples!. Cherries also have some!.!.!.just thinking of the jelling properties when I make Jam!. Very interesting article!.!.!.I wonder if items with pectin added to them will also have the same affect!. You would think so!.Www@FoodAQ@Com
