Question: Cooking with Tofu: Does anyone have a Recipe!?
I've browsed online and found a few good ideas, but I was interested in personal favorites of people who cook with it frequently, and know what's good!. Thanks :)Www@FoodAQ@Com

Enjoy the wholesome goodness of Tofu-Carrot Cacciatore
2 Tbs!. olive oil
2 medium-size onions, coarsely chopped (about 2 cups)
1 large green pepper, cut into 1 1/2-inch strips
3 large cloves garlic, minced (1 Tbs!.)
1 28-oz!. can diced tomatoes
2 8-oz!. bags wholesome baby carrots, halved diagonally
1 8-oz!. pkg!. Italian-flavored baked tofu, cut into cubes
1 Tbs!. rubbed dried sage
1 bay leaf
12 oz!. linguine or other pasta
Directions
Heat olive oil in large pot over medium heat!. Add onions and pepper, and cook 5 to 7 minutes, or until softened, stirring often!. Add garlic and cook 1 minute more, or until fragrant!.
Stir in tomatoes, wholesome carrots, tofu, sage and bay leaf!. Season with salt and pepper!. Cover, reduce heat to medium-low and simmer about 1 hour, or until carrots are tender!. Remove bay leaf!.
After cacciatore has simmered about 45 minutes, cook pasta according to package directions!. Serve cacciatore over pasta!.

They have a Lemon Tofu with Capers recipe that I like and have modified a bit!.

1 block firm or extra firm tofu
nutritional yeast
2 tbsp flour
1/4 cup lemon juice
2 tbsp soy sauce
1 tbsp balsamic vinegar
a couple handfuls frozen bell peppers
some chopped green onions
a couple spoonfuls of capers

Saute the tofu until it starts to brown!. Add nutritional yeast and flour and stir to coat!. Add liquid ingredients and cook until liquid is absorbed!. Add veggies and cook until tender-crisp!. Serve!.

I sometimes adjust the amount of the liquid ingredients and am still tinkering with the recipe until it's perfect for me, even though it's someone else's original recipe!.Www@FoodAQ@Com

SAUTEED SPICY TOFU

1 8oz pkg super firm tofu, drained
2 cloves garlic, minced
1 shallot, minced
1 green onion, chopped
2 large Chinese cabbage leaves
1 tablespoon olive oil
1 egg
1 1/2 teaspoons ham soup base
1/4 teaspoon Ortega meat taco seasoning

Saute drained tofu cubes with green onion and shallot in olive oil over high heat, adding garlic after 4 minutes!. Add thinly sliced shreds of chinese cabbage; stir fry until wilted!. Add ham soup base and stir quickly and thoroughly until all cubes are well coated!. Stir in 1/2 cup water and 1 teaspoon Wondra flour to thicken!. When water begins to be absorbed, quickly stir in 1 egg; cook over low heat for about 1 minute or until egg is no longer liquid and has coated the cubes!.
Sprinkle with Taco seasoning, if desired, and serve!.

Note: Different quick-cooking greens may be substituted for the Chinese cabbage!.


CABBAGE TOFU SALAD

1 small cabbage
1/2 packet of herbal tofu (if not available then plain tofu)
oil and vinegar dressing, as per taste
1 small green bell pepper
1 tablespoon of grated Parmesan cheese
1/2 teaspoon cumin powder (available in the Asian section of any supermarket or in the Indian grocery stores)
1/4 teaspoon black pepper powder
salt, to taste
cherry tomatoes (for garnishing)

Chop cabbage, Tofu and green bell pepper in long strips!. Add all other ingredients and toss well!. Can serve at room temperature or chilled!. Tastes good either way!.

Easiest thing to do is get some Tofu-firm is good, then you can put it in a stir fry!. Cut up the tofu & some veggies of your liking, maybe some mushrooms,bell peppers,broccoli carrots, onions, etc!. Just make as much as you want to eat!.

Use some oil and set the Wok or frying pan on high and put the tofu in (watch out for splashing)!. let it brown a little bit on each side then toss in the veggies with either soy sauce or you can get premade teriyaki at the store!. You can make a side of rice, noodles, or put it into a tortilla shell! Enjoy!

Or try this recipe:
TOFU STIR-FRIED

2 c!. tofu, cubed
2 tbsp!. vegetable oil
1 c!. onion, sliced
1 clove garlic, diced
1 c!. mushrooms, sliced
1 c!. broccoli, cut-up
16 oz!. vegetable broth
1 1/2 tbsp!. cornstarch
5 tbsp!. Teriyaki sauce
1 pkg!. Ka-Me Sai Fun (bean thread noodles)

Press out moisture from tofu gently and cut into 1-inch cubes!. Stir-fry garlic in oil for 1 minute!. Add tofu and fry until browned!. Add onions, mushrooms, broccoli and 1/2 cup of broth!. Cover and cook for 5 minutes!. In another pot, boil water and cook bean thread noodles according to package directions!. Mix the Teriyaki sauce, 1/2 cup broth and cornstarch, and add to tofu and vegetables!. Stir until thickens!. Sever tofu and vegetables over noodles and enjoy!.

With an extra-firm tofu, I'd make a tofu stir fry!. It's easy and tasty!. Look for any stir fry brand in the freezer (Pict-Sweet, Green Giant, Create a Meal) with the sauce you like - teriyaki, Szechuan, sesame!.

Cube the tofu into little blocks, and get a wok or non stick pan to medium high heat and add a little vegetable or sesame oil!. Brown the tofu on all sides, then add the sauce packet until warm!. Then add the veggies and heat until warmed!.

At the end, I like to add peanut for crunch, or sesame sticks!. A bed of white rice is really good, too!.

This is simple and tasty!.
