What is a good Vegan dinner to prepare?!
I need to prepare a dinner for a Vegan next month!. I want it to be a robust meal, but I'm an omnivore and this isn't really my forte!. Any suggestions on menu items!? Please keep in mind that I live in a rural part of a western state, and my shopping options are pretty much limited to Wal-Mart or Safeway!. Thanks!.Www@FoodAQ@Com

Get yourself a chili mix!. Add a can of beans seasoned for chili and a can of tomatoes seasoned for chili!. also add kale (they sell this at Wal-Mart and Safeway!.!.!.it's a leafy green in the produce section) and lentils!.!.!.and don't forget the spice (leave it on the side if not everyone likes it)!. Serve this with baked corn tortillas (you can make tostadas out of it) or cornbread made without eggs or dairy!.

Recipe for vegan muffins copy-and-pasted from an email a friend sent:

Ingredients:
1 3/4 cups (220 g) unbleached all-purpose flour
1 teaspoon baking soda
1 cup (200 g) granulated sugar
1/2 cup (120 ml) canola oil
1 tablespoon white distilled vinegar
1 teaspoon vanilla extract
8 ounces (225 g) frozen or fresh strawberries, crushed or pureed
Instructions:
Preheat the over to 350°F!.
Lightly grease standard muffin tins or fill the muffin cups with cupcake liners, or grease 9-inch loaf pan!.
Mix together the flour, baking soda, and sugar in a bowl!. In a separate bowl, combine the oil, vinegar, and vanilla!. Add the strawberries and stir to combine!. Create a well in the center of the dry ingredients, and add the wet ingredients!. Stir to combine, but do not over-stir!. Pour** the batter into the prepared muffin tins, filling them halfway!.
Bake for 30 minutes for cupcakes or 1 hour for a cake, or until a toothpick inserted into the center comes out clean!. Remove form the oven and place on a wire rack to cool!.
Yield: 12 to 16 cupcakes or 1 standard-size loaf cake!.
**It says pour, but by the time I am ready to fill the muffin tray the batter is pretty much the consistency of play-doh!. So it's more like "scoop" into muffin tray!."

That's very thoughtful of you to want to prepare dinner for a vegan friend!. You could make something you're likely familiar with: spaghetti, tomato sauce, salad with Italian dressing, and vegan garlic bread!.
Or you could branch out into something you're less familiar with!. For example, one dinner I really like is tempeh, brown rice, and a green vegetable, all with peanut sauce or carrot-dill sauce!. You might want to look at the library or online at veg*n cookbooks and see if anything strikes your fancy!.Www@FoodAQ@Com

If you need to buy items that you can't find locally!.!.!.there are plenty of online stores that deliver!. Try veganstore!.com for some specific vegan ingredients you would like to use that you won't be able to find at Wal-Mart!. Wal-Mart should have tofu and maybe tempeh!. You can stir fry that, make mashed potatoes (no milk), they even sell "vegan" butter by way of margarine!. Plus you could have tons of yummy veggie sides like asparagus, broccoli, eggplant, spinach, etc!.Www@FoodAQ@Com
