Tofu & Potato Dinner

Ingredients:

3-4 potatoes
8 oz extra firm tofu (approx)
seasoning for tofu: I like Braggs or soy sauce, garlic, oregano, basil, and some chili garlic sauce
steamed broccoli
steamed rice

Directions:

Cube potatoes into bite size pieces!. Cook in small amount of vegetable oil with some salt and pepper!. (I make extra to use in Soyrizo burritos the next morning) Start at a low heat, covered to cook, then turn up heat uncovered to brown!. Stir occasionally!.

Chop tofu into small pieces!. Fry in separate pan with seasonings, using the same technique!.

Layer steamed rice, broccoli, potatoes and tofu!. Sprinkle with a little Braggs and enjoy

This recipe is super yummy and super easy, no skill required!

Serves: 2-4 helpings

1 carrot, grated
1 tablespoon sesame seeds


Blend all ingredients well in a blender!. Form four patties and fry in a little oil on both sides until light brown!.

Variation: Cover patties with tomato sauce and sprinkle with vegan cheese!.

Among my favorite vegan meals is gazpacho with fresh corn bread and baked squash!. There are many recipes for all those, but here is a good place to find gazpacho recipes!. I have my own method that is quite different from most recipes, but it is time consuming and would take up a lot of space here!. What you can do is go the site below and make one of their recipes, and then for future use you can experiment with all sorts of ideas you come up with!. I love garlic in mine--lots and lots of garlic, the fresh kind, plus plenty of scorched tomatillos and really good tomatoes!. Several kinds of peppers (hot or not, your choice) add fine flavor and great color!. Cucumbers, some peeled, some partly peeled, some not peeled!. Lime juice!. Broth if you like!. Have fun!.

I don't puree any part of mine because I like the colors and textures of pieces of veggies!.

Most recipes are pretty easy!. The corn bread can be scratch made or from a mix!.

This is what we're having tonight!. I did all the prep this morning before work so all I'll have to do is lash it in the oven when I get home later!.
Roasted root vegetables with thyme!.
Chop any root veg you have into evenly sized chunky pieces!. I used, red onion, carrot, parsnip, baby potatoes and sweet potatoes!. Put them in a large baking tray and sprinkle with crushed garlic and thyme!. Give them a good seasoning of salt and pepper and splash on some oil!. Toss all the veg in the oil so they're coated!. Preheat the oven to 200 celsius and they shouldn't take more than 45 mins to cook!. I usually serve it with doorsteps of garlic bread!.Www@FoodAQ@Com

Carrot raisin Salad
Mix well
1 # wholesome carrots shredded
1/3 C vegan mayonnaise
2 T sugar

2 T wine (optional)
Chill
