Hi, I'm the only vegetarain in my family as well! Although don't live in the same household with them anymore, I know they scratch their heads wondering what to 'feed me' when I visit! It really isn't that hard!

In the 30 plus years that I've been a vegetarian, I've discovered many delicious, healthy, and easy recipes!

I recently discovered a site that recommends a great cookbook that I think will satisfy your needs!.!.!.Check it out!

Each easy-to-prepare recipe is written in a concise, easy to read/use format!.

The recipes use readily available ingredients with a focus on fresh, seasonal foods, and require no special cooking skills or equipment!.(Thankfully!)

Whether you’re a “flexitarian” looking for a meatless meal now and then, or a committed vegetarian, you’ll find a huge variety of recipes for your particular tastes and needs!.

Each recipe features complete nutritional data (with diabetic exchanges) and emphasizes the “super foods” that boast high nutritional, antioxidant, and phytochemical qualities!. also included is a “smart carb” chapter if you are watching your carbs intake!.

Some of the features I found most beneficial were:

* More than half of all recipes are marked to indicate they can be made in 45 minutes—or less!.
* Every recipe is marked so it can be readily identified as vegan, lacto-vegetarian, ovo-vegetarian, or lacto-ovo-vegetarian!.
* More than 320 recipes are vegan!.
* More than 500 recipes are for delicious entrees—including Fettucine with Fresh Fennel and Brussels Sprouts, Sweet Potato Chipotle Chili, Spaghetti Squash with Roasted Tomato-herb Sauce and Artichokes, and much more

Delicious, healthful cooking has never been easier!

I hope this helps!. I think you made a great lifestyle choice by deciding to go vegetarian!. I don't miss eating meat at all, and have found that many of my friends are including less and less meat in their diets!.

I wish you the best of health!
