This is the perfect thing to bring, since it can be served hot, cold or room temp (and made a couple of days ahead):

ARTICHOKE RICE SALAD
1 pkg!. chicken flavored rice mix (like Rice-a-Roni)
2 green onions, thinly sliced
1/2 green pepper, diced
8 pimento-stuffed olives, thinly sliced
2 6-oz!. jars marinated artichoke hearts, cut up
1/4 tsp!. curry powder
1/3 c!. mayonnaise
Make rice per package instructions!. Add everything else into hot rice and stir to blend well!. Serve hot, cold or room tempWww@FoodAQ@Com

I would go with something that keeps tune with the Thanksgiving theme, but it doesn't have to be "traditional"!.

You could do something fun, like scoop out two acorn squashes, cook the fruit with margarine and brown sugar in one of the squashes, then take it out and transfer it to the other uncooked shell!. Cover it with bread crumbs and maybe a bit of shredded cheese (since you said they were lacto)!. You could carve the top of it to look fancy!.

It's just one idea, but there are plenty of vegetable dishes that could be made to compliment a thanksgiving theme :) If I were you I'd just think more about presentation (fall platters, or garnish with one of those tiny pumpkins or gourds)!.Www@FoodAQ@Com

Carrot-Onion Quiche
1 pie crust
3 T butter
3 medium onions, minced
3 medium carrots, very thinly sliced
2 T flour
3 eggs
1 c milk or evaporated milk
1 c Swiss cheese, grated
?-? t salt
?-? pepper
1-1? t dried savory, crushed
1-1? t seasoning (Mrs!. Dash Original Blend or Spike Seasoning Blend)
1 t fresh OR 1/3 t dried chives, chopped
1 t fresh OR 1/3 t dried parsley, chopped

Directions Preheat oven to 425!. Roll out pie crust, arrange in pie plate, and bake for 10 minutes, until crust starts to color!. Remove from oven and reduce temperature to 325!.
Meanwhile, melt butter over medium heat, add onions and carrots, and sauté until carrots are slightly softened, 5-7 minutes!. Remove from heat!. Stir in flour, then remaining ingredients!. Return to stove and stir until cheese melts!.

Pour into pie crust and bake 30-35 minutes, until the top is slightly firm!. Remove from oven and let cool for 5 minutes!. Slice and serve!.

Mushroom Strudel
1 pound mushrooms, chopped
1 c cream cheese, cut into pieces OR cottage cheese
1 c sour cream, yogurt, or a combination
1 t salt
black pepper
1 t dill
1 c bread crumbs
2 whole scallions, finely minced
? c parsley, minced
3 T lemon juice

10 sheets filo dough
3-4 T olive oil
? c poppy or sesame seeds (optional)

Directions Preheat the oven to 375°!. Oil the baking sheet!.
Cook the mushrooms over medium heat for 10 minutes!. Drain and squeeze out all the liquid!.* Place in bowl!.
Add cream or cottage cheese, mix well, then add everything listed above up to ~~~!.
Place a sheet of filo on clean, dry surface!. Brush with oil, layer another sheet on top, brush with oil, and repeat until you have 5 sheets layered with oil!.

Place half of the filling along one side, fold in the edges, and roll!. Carefully transfer to baking sheet and brush top with oil!.
Repeat with remaining filo and filling, so that you end up with two rolls!. Sprinkle top with optional seeds!.
Bake 25-30 minutes, until golden brown and very crispy!.
Cut with serrated knife and serve hot or warm!.

Easy Stuffed Mushrooms recipe


Ingredients (use vegan versions):





1 carrot

1/3 pound of squash

1 small onion

10 mushrooms
Directions:
Shred carrot and squash, chop onion and put in a bowl!.
Take the stalks out of the mushrooms and chop the stalks up
really fine!. Add to the rest of the goodies and sautee for
about ten minutes!. Brush the caps with olive oil and put
in a pan!. Then stuff with the goodies, and bake at 400 for
fifteen to twenty minutes!.

Carrot Apple Walnut Salad

Serves six
Ingredients:
4 large carrots, peeled and coarsely grated
1/2 cup chopped walnuts
2 medium apples, cored and cubed
1/2 cup raisins
3 T!. olive oil
1 T fresh squeezed lemon juice
2/3 cup mayonaise (or veganaise)
1/2 t salt
pepper

Place all ingredients in a large bowl and stir until well mixed!. Refrigerate until you are ready to serve!.

Great American Peanut Butter Blossoms

48 Hershey's Kisses
1/2 C!. shortening
3/4 C!. creamy peanut butter
1/3 C!. granulated sugar
1/3 C!. packed light brown sugar
1 egg
2 tbs!. milk
1 tsp!. vanilla extract
1 1/2 c!. all purpose flour
1 tsp!. baking soda
1/2 tsp!. salt
Granulated sugar

1!. Heat oven to 375 F!. Remove wrappers from chocolates!.
2!. Beat shortening and peanut butter in large bowl until well blended!. Add 1/3 C!. granulated sugar and brown sugar; beat until fluffy!. Add egg, milk and vanilla; beat well!. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture!.
3!. Shape dough into 1" balls!. Roll in granulated sugar; place on ungreased cookie sheet!.
4!. Bake 8-10 min!. or until lightly browned!. Immediately press a choco!. piece into the center of each cookie; cookie will crack around edges!. Remove from cookie sheet to wire rack!. Cool completely!.Www@FoodAQ@Com
