Vegetarian/vegan snacks?!


Question: Vegetarian/vegan snacks!?
I'm on a healthy roll and wanna keep it going: I want to make a kind of grain/fruit bars!.!.or in a snack form that are not only uber-healthy and good for you but not that hard to make!.

Just looking for some recipes / how-to-do, etc!.

Im feeling like tossing some grains with fruit together but want to have an "adherant" to combine them yet obstain from a heavy syrup or sugar!.

Hermit Bars Recipe
Makes 20 bars

Per Bar: 155 calories, 3g fat


Ingredients:
1 1/3 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground allspice
1/2 tsp freshly grated nutmeg
1/4 tsp ground cloves
1/2 cup dark molasses
3/4 cup packed light brown sugar
1/4 cup vegetable oil, preferably, canola
1/4 cup apple butter
2 large eggs
1 1/2 cup raisins



Instructions:
1!. Preheat oven to 350 degrees!.
2!. Lightly oil a 9 by 13-inch baking dish or coat it with nonstick cooking spray; set aside!.
3!. In a small bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg and cloves!.
4!. In a large bowl, beat together molasses, brown sugar, oil, apple butter and eggs with an electric mixer until smooth!.
5!. Add the dry ingredients and beat on low speed just until combined!.
6!. Stir in raisins!.
7!. Transfer the batter to the prepared baking dish; smooth the top!.
8!. ake for 20 to 25 minutes, or until the batter feels "set" when lightly pressed in the center!.
9!. Let cool in the baking dish on a rack!.
10!. Cut into 20 bars!.
11!. Store at room temperature in an airtight container!. These moist, spicy favorites keep well (if they get the chance)!.



Breakfast bar >_<mmm yumm

INGREDIENTS

1 cup honey (use maple syrup or other honey substitute)
2/3 cup smooth peanut butter
2 2/3 cups rolled oats
1 cup whole wheat flour
1 t cinnamon
1/2 t cloves
1/2 t nutmeg
1/3 cup wheat germ
2 cups mix-ins in any combination of the following: coconut, raisins, chocolate or carob chips, unsalted nuts, any finely chopped dried fruit such as dates, apricots, apples, etc!.

METHOD
Mix honey and peanut butter until well blended!. It might help to warm the honey in the microwave about 20 seconds so that it is not so stiff!. Stir in oats, flour, wheat germ and mix-ins!. If mixture seems too dry, add water 1 tablespoon at a time!. If it is too sticky, add oats 1 tablespoon at a time!. Mixture should be slightly sticky, but still easily spread in a pan with greased fingers!.
Press into a 9 x 13 inch (23 x 33 cm) pan lightly greased!. Bake at 350F/180C until barely browned!. DO NOT OVERBAKE! Cut while warm into desired sized bars!.

When completely cool, remove from pan with a greased spatula!. Wrap each bar separately in plastic wrap and then store in a zip bag or air tight container!. These freeze extremely well!. Makes about 2 dozen bars!.


Granola Bars

1 cup rolled oats
2/3 cup nuts & seeds (sunflower, walnuts, pepitas, sesame, etc)
1/4 cup soy grits
1 1/2 cups cereal
1/4 cup barley malt (more if necessary to bind)
4 tablespoon peanut butter
1/2 cup dried fruit


Toast first 3 ingredients in 275 degree oven for about 15 minutes!. Add to large bowl with cereal!. Heat barley malt in microwave or on stovetop until it begins to bubble or is a runny liquid!. Remove from heat!. stir in peanut butter!. If too thick, heat until liquidy or add more barley malt!.

Pour hot mixture over cereal mixture and stir!. Place mixture in baking dish or tupperware container and use oiled hands or oiled parchment paper to flatten!. Cut when cooled!.



Oatmeal Chewies

5 cups oatmeal (moistened with water)
3 cups chopped cashews
3 cups organic thompson raisins
8 oz jar of sorghum
1 large or 2 small bananas


Pre-heat oven at 300-350 (depending on your oven)!. Pour oatmeal into bowl and moisten!. Blend banana and sorghum and then mix thoroughly into oatmeal!. Chop cashews and mix raisins and cashews into oatmeal mix!.

Spoon out onto lightly oiled pan into whatever size Oatmeal Chewies you wish to bake!. Bake 5-8 minutes!.

These recipes will make your taste buds sing =] and you wont feel gilty eating them lol =]!.
