Non Pasta Vegetarian Meals?!


Question: Non Pasta Vegetarian Meals!?
Hi I am a vegetarian and most of the meals I make invole pasta!. They are fattening if i have to much, so i would like some ideas for meals that arent TOO involved like lasgna or something and are vegetarian!.

Simple things like different seasonings on grilled veggies, salads, and sandwiches!. THank you!

How bout Ratatouille!! This is the perfect time of year for it!. A French Provincial recipe with zucchini, eggplant, onion, garlic, peppers and tomatoes!. You simmer it till it is rich and chunky, and really better to let it sit over night then serve it the next day!. You can have it warm or cold!.

I love it warm with a plate of crusty baguette slices, or sliced planks of bread grilled with a little olive oil!. (crostini) Shave a little cheese over it - parm or gruyere!. This with a simply dressed vinaigrette salad is out of this world!.

The other thing you could make is a beautiful Salade Nicoise!. Now I am an omnivore, and most recipes use tuna and a bit of anchovy!. But my partner hates both, so I leave it out!. But it is a rich tossed salad of delicate butter lettuce, steamed seasoned potatoes, green beans in vinaigrette, capers, tomatoes, nicoise olives, and hard boiled egg (unless you are vegan) I would try to add something else with some protein, like maybe some white beans, Below is Julia Child's classic recipe!. I'm not vegan or vegetarian in any stretch of the imagination, but I do like to fix veggie meals now and then!.

I do a sort of vegetable stir fry to feed 6 people!.!.!.
3/4c Squash (any kind)
3/4c Okra
3/4c Yellow Onion
1/2c celery
1 diced tomato (add very last)
any other veggies you want

Stir fry in a hot wok with 1/8 cup vegetable oil, splash on some soy sauce while cooking, Season to taste, add the diced tomato!.

Serve over wild long grain rice!.

I love portabella mushrooms- marinate in balsamic vinegar, olive oil, garlic, crushed red pepper flake, and salt, and pepper- you can slice up and stir fry or grill whole!. I serve this on a wheat bun with a little steak sauce!. I also love couscous- you can make this with stock and add veggies to extend the meal!.
Eating beans in your diet is also good- you can make a bean and tomato chili- easy and yummy!.

Indian cuisine is largely vegetarian, and have many important nutrients!. You can make veggie burgers quickly and easily, if you have a food blender, rice dishes can be easy, soup and noodles take only 5 or 10 minutes, stir fry, and salad rolls!. Don't underestimate the value of a sandwich!.
