Leeks are somewhat like green onions in taste! they are milder than onions! I like dipping them in cheese! or else I microwave them in the oven with margarine! Leeks are good anywhere you would use an onion! You can eat it all except the roots!. Some do throw away the green part cause it's a little tough sometimes but you can eat that!Www@FoodAQ@Com
How To Wash and Prepare Leeks
Leeks are a wonderful vegetable, but they required a fair amount of preparation before they can be used!. Here are some tips on washing and preparing leeks!.
Cut off the fibrous root
If the dark-green outer leaves are very tough and/or spotty, remove them
Trim the ends of the remaining leaves
Cut the leek in half length-wise, then slice or chop
Place in a bowl of warm water and swirl around to help the dirt fall to the bottom
Take the leeks out, place in a colander, and rinse again!. Don't just pour them into the colander as the dirt at the bottom of the bowl might get trapped in the leaves again!.
Many recipes call for just the "white parts" of leeks, when in fact the light green is just as good and even the dark green is usable if it will be sautéed for at least 5 minutes or so!. I nearly always use all three parts in my recipes!.

Leek and Potato Gratin
Ingredients
2 tablespoons margarine
2 large leeks, white part chopped
1 red bell pepper, diced
3 matzos, broken
1 cup hot water
4 potatoes, baked, peel, slice
6 ounces evaporated skim milk
salt and pepper
1 cup mozzarella cheese, Grated
chives, Minced (for top)
Directions
1Preheat oven to 350F!.
2Heat margarine in skillet!.
3Add leeks and saute, cover until wilted!.
4Add red pepper saute 5 min!.
5Combine matzos with water in bowl, soak 3-5 min!. until soft!.
6Drain, squeeze out excess water!.
7Combine leek mixture and matzos with remaining ingredients, except cheese and chives!.
8Stir until fully mixed!.
9Pour into an oiled shallow 2 qt!.
10casserole!.
11Sprinkle cheese over top followed by chives!.
12Bake 35 to 40 min, or until top golden!.
13Let stand 5 to 10 min and cut!.

2 large wholesome carrots, peeled and cut in pieces
I leek (white part only)
3 cups vegetable stock
2 medium potatoes, peeled and cubed
1 cup heavy cream (or half and half)
Chopped chives
I N S T R U C T I O N S
With the metal blade in place, add the wholesome carrots, potatoes and leek to the beaker!. Process, turning on and off rapidly, until coarsely chopped, about 15 to 20 seconds!.
In large saucepan, combine chopped , vegetables with vegetable stock and simmer for 30 minutes!. Strain vegetables, allowing liquid to drain into a storage container!. Reinsert metal blade and puree vegetable mixture in 2 batches!. Combine Salt and pepper to batches with vegetable liquid!. Stir in cream!. Season taste with slightly more salt and pepper than necessary!. as the taste will be dulled when the soup is chilled!. Cover and refrigerateWww@FoodAQ@Com

some people use it as onions or garlic, and cook it in stir fry dishes!. You can always put it in soup!. Remember that you throw away the green part and just keep the white part!. I have some in my fridge I have no idea what to do with!. I used some in a stir fry dish!.Www@FoodAQ@Com
Leeks can be used in pretty much any recipe that calls for onions!. Cockaleekie soup, made with leeks and chicken, is a mainstay in Scotland!. Many French stews use leeks!. And leek and potato soup is very nice!.

I have them every week in a cheese sauce!.
I always just cut mine across rather than lengthwise and also use them in stews and soups!. They have an onion type taste!. If in the mood leek and potato pie which has a cheese sauce in it!.
