Substitution for chicken breast?!


Question: Substitution for chicken breast!?
I recently turned vegetarian!. Unfortunately, my bf and son are big meat eaters!. One of their favorite dishes is pan "fried" chicken with mashed potatoes on the side!. What is something else I can serve instead!. (I WAS going to just make that for them and something else for myself, but after learning chickens are about the worst treated in factory farms, I decided I am never buying meat again!)
So I need something to make that has a similar texture and taste!. (They don't particularly care for tofu!. At least not the squares I bought so far!.!.!.)

I imagine you might have a difficult time getting them to eat a soy-based chicken substitute, as many of them are pretty gaggifying!. Your best bet is probably a Quorn fake chicken product, which are not made from soy and don't have that soy taste/texture that a lot of people dislike!. They have breaded cutlets, "naked" cutlets, strips/tenders, nuggets, etc!.

If you live near a Whole Foods or Fairway grocery store (or Wild By Nature) see if they carry either seitan or tempeh!. Both work well as meat substitutes!. also check in the frozen section for Morningstar Farms or Boca brand meat substitutes!. also when preparing tofu, try pressing it to get the extra water out, then marinating it!. (
Some people even freeze it to give it a different texture) Don't tell them what they're eating is fake meat and they might be more open minded about it!.Www@FoodAQ@Com

I'm sorry but you really shouldn't limit what BF and son eat just because of what you believe is wrong or unjust!. i respect what you believe but you should still give them the option of eating what they enjoy and choose to eat!. there's no perfect substitute for the real thing because chicken is delicious =] but as far as some sort of substitutes go, Wild Oats brand has some popular substitutes or you can try Boca Burgers/products, they are a vegetarian meat, they taste very similar to actual meat and don't taste way too awful!. hope this helpsWww@FoodAQ@Com

Sounds like you're in for a big fight!. You can't force your vegetarian diet on your family if they don't choose it!. For the sake of family peace I would just keep on buying meat!. Besides, you can't believe everything you hear, not all chicken farms are mistreating their animals!. The people at PETA aren't showing videos of well cared for livestock!. They sale chicken strips (VEGAN) at most stores (Walmart) and it taste good, a bit chewy but good!.

They also sell 'chicken breast' (tofu) at most health food stores, I haven't tried it yet but one of my vegetarian friends said it was goodWww@FoodAQ@Com

They make brands of meat substitute like quorn and boca they are made from soy and veggie protein and they taste like the real thing

You might try your hand at making seitan (aka "wheat meat!.") It's made from wheat gluten, the protein in wheat flour with the starch rinsed away!. You should be able to find any number of recipes for steamed or simmered seitan online!. Once you get the hang of it, it has a nice texture!.

Even simpler and uniquely delicious are chickpea cutlets!. They won't fool anyone into thinking they are chicken (and aren't supposed to) but they've got a good texture and flavor and are great alongside mashed potatoes and gravy!. My meat-eater boyfriend LOVES them!. And they make good leftovers!.

Chickpea Cutlets
1 c cooked chickpeas (canned are fine)
2 Tbsp olive oil
1/2 c vital wheat gluten flour
1/2 c plain breadcrumbs
1/4 c vegetable broth or water
2 Tbsp soy sauce
2 cloves garlic, pressed or grated with a microplane grater
1/2 tsp lemon zest
1/2 tsp dried thyme
1/2 tsp Hungarian paprika
1/4 tsp dried rubbed sage
olive oil for panfrying

In a mixing bowl, mash the chickpeas together with the oil until no whole chickpeas are left!. Add the remaining ingredients and knead for about 3 minutes until strings of gluten have formed!.

Preheat a large heavy-bottomed skillet over medium heat!. Meanwhile, divide the cutlet dough into 4 pieces!. To form the cutlets, knead each piece in your hand for a minute, then flatten and stretch each one into a roughly 4"x6" cutlet shape!.

Add a thin layer of oil to the pan!. Place cutlets in the pan and cook about 6-7 minutes on each side, until lightly browned and firm to the touch!.

You can also bake them if you prefer!. Preheat the oven to 375 degrees and brush each cutlet with a little olive oil on each side!. bake for 20 minutes then flip and bake for 8-10 minutes more!. They're firmer and chewier this way!.Www@FoodAQ@Com
