It hasn't been pasteurized (which means they cook it very quickly to kill any microbes)!. It's healthier because honey doesn't need to be pasteurized because it is an antiseptic!. I don't know why they bother pasteurizing it!. It ruins all the goodness!.Www@FoodAQ@Com

Raw honey has not been heated at all (though some do and then claim it's raw -- be sure to research before buying)!. Honey is heated so it can be refined from the bits of wax and pollen, royal jelly, propolis, etc!., and so that the honey remains liquid and free-flowing rather than crystalizing!.

Raw honey can only be packaged directly after harvesting before it hardens but when honey is heated to keep it free-flowing it kills off the beneficial enzymes and antibiotic qualities:

it would be like going to a bee hive and cracking it open!. then eating the stuff straight out of the comb!.

it comes straight out of the hive and into the jar, while regular honey is cooked, or pasteurized, because some people think it is germy or whatever!.!.Www@FoodAQ@Com
