I had a Mediterranean pizza for dinner today, but I don't know if it's the kind you're looking for (I'm eating a bastardized version from the Betty Crocker recipe)!.
Anyway, it's vegan if you find vegan feta cheese (btw, there's some really gross recipes out there, one requiring chicken flavored broth, wtf!?)
this feta seems OK http://www!.recipezaar!.com/118182
Or, whatever you find at your specialty shop
anyway, my version of med pizza:
On a warmed flat bread, add:
-humus as the base (you can either purchase it or make it, using canned garbanzo beans, tahini sauce (sesame seed oil), olive oil, garlic, paprika, lemon, vinegar; or just follow the recipe on the can of garbanzo beans
-lettuce, chopped (best to use spinach, then romaine, last resort is iceburg
-cucumbers (sliced)
-bell pepper, diced
-tomatoes, diced (or cherry tomatoes, sliced)
-red onion, sliced
-green olives, sliced
-fake feta, crumbled
-dressing (balsamic vinegar, extra virgin olive oil, brown mustard, mix well)
as an aside, my lebanese boss at work gave me a really good idea for a snack, I call it lebanese quesadillas: use the fake feta, put it inside of some pita bread with a bit of sliced tomatoes, and stick them in the toaster oven until it's pretty warm/pita is harder, nummy :-)
I'm lacto-veg, so I dunno how the fake feta works out, but if you find one that works, these recipes are really good, I promiseWww@FoodAQ@Com

I'm not clear on what you mean by "Mediterranean pizza", but it seems to me you don't use any meat and use vegan cheese and that's all there is to it!.Www@FoodAQ@Com
Lots of great Mediterranean-type pizza ideas and recipes here as well as plenty of others:
