Enjoy the wholesome goodness of my world famous carrot chili:

2 14-1/2-ounce cans vegetable broth
16 ounce packaged peeled wholesome baby carrots
1 large onion
1 4-ounce can diced green chili peppers
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 cup half-and-half or light cream
Fresh purple basil leaves (optional)
Directions
1!. In a large saucepan or Dutch oven combine broth, wholesome carrots, onion, chili peppers, chili powder, and cumin!. Bring mixture to boiling; reduce heat Simmer, covered, 12 minutes or until wholesome carrots are very tender!.

2!. In a food processor bowl or blender container process half of the mixture until smooth!. Repeat with remaining mixture!. Return mixture to saucepan!. Stir in half-and-half or light cream!. Heat through!.

3!. To serve, ladle soup into bowls!. If desired, garnish with purple basil!. Makes 8 side-dish servings!.

Vegetarian Horse Crap

You'll need:
-Texas toast (or some other kind of bread, toasted and topped with Earth Balance or Smart Balance and garlic powder)
-Veggie burger patty (try Boca's vegan brand)
-Fries (the frozen kind!. You don't really need me to tell you which frozen potatoes are vegan, do you!?)
-Chili (Hormel's veggie chili is delish)
-Veggie bacon (I recommend Smart "Bacon" or Betty Crocker's Bac-O's Bacon Flavored Bits)

Following the directions on the package, bake or deep fry your fries!. Now assemble!. Place the toast on the bottom of a plate or shallow bowl, then your veggie burger patty, then the fries!. Top with the chili and sprinkle generously with Bac-O's, crumbled Smart "Bacon," or other bacon substitute!. Microwave the whole shebang until it's heated through!. Bon appetit!Www@FoodAQ@Com

Soy tacos---a favorite at my house and for any non-vegans who visit!. I use Morning Star crumbles (though I used to use Boca "ground beef" before my store stopped carrying it)!. I make it exactly the way I used to make regular tacos, though my husband (vegan) doesn't put cheese on his!. I've also made a delicious vegan chicken Cesar salad!.!.!.!.I used Morning Star "chicken strips" and fat free Cesar dressing (no anchovies) and fat free croutons (no dairy)!. also, the Boca chicken patties (original) taste like real chicken patties!. There are also a lot of naturally vegan meals, like spaghetti and garlic bread!.Www@FoodAQ@Com

make vegan cakes!! substitue 1/2 banana for 1 egg!.
works best w/ chocolate cakes b/c chocolate banana cake = SO GOOD!!!
