Dried beans don't have to be soaked!. Soaking and especially changing the water before cooking tosses out good nutrients!. It really only shortens the cooking time a little bit which can be a big deal in perhaps the summer or if cooking fuel is an issue!. But for most beans it only takes a few minutes off the cooking time and only maybe a half hour off the cooking time of a bean such as chickpeas!. It seems to have little to no effect on the gassy factor!.
Just rinse them and start cooking them with a half teaspoon of salt for each cup of beans starting with 2 cups of water for each cup of beans and adding boiled water as/if needed!. Put onion and garlic if you want them along with other herbs such as epazote as you wish:

But don't put baking soda in with them!. It affects the taste negatively and leaches out B vitamins!.

I never soaked my beans and they make a great stock/broth, especially the black beans (rich and dark):

Some legumes cook up quicker than others; those such as lentils and the split peas are usually done in about 30 minutes with no soaking and anasazi cook up about 30 minutes quicker than pinto!.
Cook up extra and divide into sealable, stackable containers to put in the freezer so you can just pull out what you want for the day!. Then you can just cook up a batch or two on the weekends to replenish and add variety to what you have in the freezer!. Then you can have quick chilis, salads, burritos, whatever you want with beans!.Www@FoodAQ@Com
With black eyed beans, if they're not old and stale, put them in a pyrex bowl and pour a kettle of boiling water over them!. After 25 mins they should have swollen up and be ready to cook!. This only works if they're fairly fresh and not if they're three years old!. Rinse them before cooking in fresh water!. Edit: add dried thyme or oregano before pouring the boiling water on to add a bit of flavour!.Www@FoodAQ@Com
Get yourself a slow cooker!. Soak the beans over night in it!. In the morning dump the water out and replace with fresh water!. Now cook them!.
BTW: This is why you pay so much more for the canned ones!. Www@FoodAQ@Com

Tinned ones are actually pretty good quality, and so easy to use! I use them quite frequently, and I usually frown upon any ready made meal type things!.Www@FoodAQ@Com
